Hi guys, how are you doing?

How are you *really* doing?

Like I know most of us are, I’m literally taking it day by day, slowly navigating this new normal that we didn’t choose.

I’m trying to see blips of beauty amongst all of the hard stuff going on in the world right now.

For example, it’s been amazing to watch my online and local communities tackle the isolation with words of encouragement, free online services, and a little humor.

I’ve got to say that in some ways I feel more connected than ever despite social distancing.

Anyway, I asked on Instagram what kind of content you’d like to see as we get cozy and stay home.

Many of you requested pantry and freezer- friendly recipes and I’m right there with you.

I’m planning on keeping my pantry and freezer well-stocked during this time to minimize shopping trips and maximize my menu!

You’ll find a large selection of 75+ Plant-Based & Gluten-Free Pantry-Friendly Recipes that are easily made with pantry-staples and frozen foods.

Baked Eggplant Steaks with Beets & Green Beans

By Flora & Vino Leave a Comment

Baked eggplant steaks served with diced beets, sautéed green beans, and fresh tomato. Ideal for a plant-based dinner in!

Baked Eggplant Steaks served in bowls with Spiced Chickpeas, Beets, & Green Beans

This past weekend I explored farmer’s markets in my new city and discovered the cutest little spot maybe 10-ish minutes from my new house.

Yippee!

The market was packed with late summer veggies, so I grabbed some of my favorites to build one last ode to summer.

Confession: I  *love* farmer’s markets, but I don’t go as often as I could (should!).

I’m the kind of shopper that prefers to get everything in one massive haul that bursts the seams of my reusable bags but saves me multiple trips to different stores for the right ingredients.

There’s something so exhilarating, though, about going somewhere with a limited seasonal selection.

The produce perusing process can inspire some of the best dishes when forced to work with what’s available.

What’s available this week, friends, is Baked Eggplant Steaks with Spiced Chickpeas, Beets, & Green Beans!

Jamaican Jerk Cauliflower Steaks & Rosé

By Flora & Vino 2 Comments

Vegan cauliflower steaks with a homemade Jamaican jerk seasoning and fresh squeezed orange. Serve with greens, grains, or protein of choice.

Jamaican Jerk Cauliflower Steaks served on plate of greens with lime and a fork and knife with a glass of rosé

I’ve been craving a big fancy meal lately.

The kind of meal you get dressed up for and spend hours devouring the courses.

Most of the time I’m the type of person who would choose a home-cooked meal over going out any day of the week.

Something about the helter-skelter of moving, though, has made me crave the simplicity and charm of eating out.

Partially for the food and also heavily because of the fact that I don’t have to do the dishes afterwards.

But instead of immediately jumping on Happy Cow seeking your next fix of plants, let’s make a fun cruciferous steak of our own.

These Jamaican Jerk Cauliflower Steaks & Rosé are an easy plant-based pairing to elevate your summer dinner plans!

The Quickest Vegan Curry served in bowls and served with lime and cilantro by Flora & Vino

Helllllllo.

Did you watch the Academy Awards on Sunday?

I may or may not have teared up over my dinner when Lady Gaga and Bradley Cooper took the stage to sing “Shallow”.

Oh, maybe I didn’t tell you yet– I finally watched A Star Is Born last week and I’ve been low-key obsessed with the movie and music ever since.

Which looks like me listening to the soundtrack on repeat in the studio with my camera hovering over my curry.

Curry! Do you like it?

Dan hates the smell of it,  but I love everything about it, so he dealt with the aromatic kitchen after I tested and retested today’s post.

The Quickest Vegan Curry is what you need in your life to get you through the rest of winter.

By Flora & Vino 64 Comments

Easy carrot lentil soup teeming with vegetables and fresh green onion. Perfect for an every day fall, winter, or spring one-pot soup.

Everyday Carrot Lentil Soup by Flora & Vino

Recently on Instagram, I asked what one food you could eat for a week and not get sick of.

The most common answer…was soup!

Soup people, you’re my people.

I’ve always been a soup lover, way back to childhood when my parents gave us big bowls of lentil soup on busy weekend days packed with activities.

I imagined my spoon to be a tiny raft, corralling tender lentils and the occasional carrot and celery chunk to their delicious demise.

Recently, I recreated my favorite with lots of leftover vegetables in my fridge.

This Everyday Carrot Lentil Soup is flavorful and filling, with an easy recipe you can make in 30 minutes in one pot.

Grab a bowl and a spoon and let’s get to herding legumes and veg.

Celebrate summer with this easy and light peach salad. Juicy peaches, crunchy pecans, hearty quinoa, and fresh spinach with maple tahini dressing.

I don’t get to the farmer’s market enough, guys.

I went there this weekend with Dan and Harper on Saturday morning, and it was such a treat!

Everything was ridiculously fresh and appealing, and I really wanted to just buy the whole stand and take it to go.

Instead, I picked out some juicy yellow peaches and a few bags of freshly picked spinach for a fresh summer salad.

This Peaches ‘N’ Quinoa Salad is simple and sweet with only a handful of ingredients to keep things light and easy for summer.

All you need is some juicy stone-fruit and an optional glass of white!

Cracker Crusted Cauliflower Steaks

By Flora & Vino 1 Comment

Creative veggie-centric “steaks” made with cauliflower and a crave-able cracker coating. Oil-free, gluten-free, grain-free and packed with flavor.

Cracker Crusted Cauliflower Steaks by Flora & Vino

The other night Dan came home from a dinner raving about a juicy steak that he’d eaten.

For those of you who don’t know, my better half is decidedly not plant based, so we communicate our passion for our separate eats verbally to each other.

OK, so, actually it’s usually me babbling to Dan, just home from work, about all of the amazing things I made that day.

I lean over the kitchen island granite excitedly, waving colorful snapshots on my iPhone in his face.

So Dan’s steak stories got me thinking about steak.

Not about missing steak, but how it would be fun to do a veggie-centric dish where there is one veg star.

Friends, I give you Cracker Crusted Cauliflower Steaks, starring Cauli.

Green Coconut Curry with Cauliflower Rice

By Flora & Vino 4 Comments

Plant-based green curry with spring vegetables and cauliflower rice. Perfect for weeknight dinner and it stores well as leftovers for lunch!

Green Coconut Curry with Cauliflower Rice served on wooden circle board with fresh lime, sliced radish, cilantro, and two spoons on the side

Is there anything better than a warm bowl of curry?

It’s definitely up there on my list of things that make me happy in the colder weather, along with unexpected snow days, steaming mugs of hot cocoa or tea, and roomy fuzzy sweaters (not itchy, though!).

All of your favorite veggies bobbing up and down in that fragrant creamy coconut based broth…

This time of year, everyone has green on the brain.

Green for spring, the unspoken word on everyone’s parched lips.

The majority of the cold is over but spring feels like it’ll never get here.

I was hoping to score a few cozy snow days in before my birthday (April 2nd), but it looks like that might not happen.

If you’re like me, you’re pretty much over the cold weather after the charm of Christmas is in the rear view mirror.

If it’s going to be cold, the weather could at least be pretty about it and give us some fluffy white stuff.

I’m getting through the seasonal dissonance by experimenting with new curry combinations in the kitchen.

This Green Coconut Curry with Cauliflower Rice is so hot, it’ll definitely give Mother Nature the hint hint hint.
