I feel intensely focused lately.

Kind of like 2021 is a half marathon and I’m on mile 11 and the finish line to the 13.2 mark is almost within eyesight. 

Yeah, things are serious here at F&V as I dash to finish deadlines, designs, and dreams for 2021. 

Do you feel that way at the end of the year, too? 

We’ll get there, guys, we just need to keep swimming, just keep jogging, just keep making small movements towards big destinations.

I was on a phone call last week with a food brand client, when I had an epiphany.

I definitely can’t always say that about work calls, can you? 

Anyway, before talking blog and business, we had a great chat about being plant-based.

She mentioned that she was consciously eating more plants, and I applauded her for trying out a plant-based meal every day. 

We went on to talk about the incredible variety of vegan product alternatives that exist today.

“You know,” she mused out loud, “I wish there was a list that you could give me of which products are worth trying and which aren’t.”

“That’s an excellent idea,” I said.

It’s raining here today and it looks like we might have a wet Christmas instead of a white one. 

It’s OK, because I have a whole day planned around baking and cooking.

Usually on Christmas morning growing up we enjoyed a big savory breakfast to fuel for an epic gift opening session.  

There’s something about a big savory brekky that feels so cozy and wonderfully wintry.

My favorite way to do it plant-based is to throw all of the savory stuff in a bowl.

Today is two weeks until Thanksgiving and yesterday was six weeks until the new year.

Not that I’m counting or anything.

To be honest, I haven’t even fully acknowledged that it’s November, let alone the side I’m going to bring to Thanksgiving Day dinner at my parents’.

How was your week?

I’m writing like it’s already over because it feels impossible for one more thing to go down.

For example, we had our dishwasher serviced today after a week of crackling dishwasher cycles.

The service guy crawled out from under the washer with handfuls of almond pieces from the dishwasher drain, looking perfectly polished and white.

I tried to explain to him that I was a food blogger, you see, and it’s really hard to get all of the dishes to come clean.

He just laughed and shook his head and continued picking almonds.

Needless to say, none of the dishes are clean right now at the house, so takeout sounds like a pretty good idea.

Except that this Vegetable Quinoa Fried “Rice” with Edamame sounds better.

You just need cooked quinoa, your favorite veggies, and…preferably a working dishwasher.

Well hello there!

How was your weekend?

This past week/weekend I went to Natural Products Expo East and visited with all of my favorite brands and scoped out the newest products in natural foods.

It was a lot of walking, a lot of talking, and a lot of sampling!

Somehow I had the bright idea to hit the grocery store on the way home from the trade-show, to, you know, kill two birds (two tofus?) with one stone, so to speak.

After being surrounded by food and chatter about food all day PLUS lugging of all of the loot from the show AND all of my groceries up three flights of stairs (we’re on the top unit of a stacked condominium!)– I decided I didn’t want to see or hear about food again. Like ever.

But then of course that changed because…a girl’s got to eat.

I eased back into the kitchen today with this fail-proof 1-Pan Meal that’s perfect for meal prep!

Hi friends!

How was your Fourth of July?

We took Harper to her first fireworks show, and, to be honest, she seemed a lot more interested in the pizza Dan was eating than the bursts of color exploding into the night sky.

Priorities.

Like mother like dogger, right?

My priority lately has been colorful cauliflower rice.

Specifically, these Turmeric Cauliflower Rice Bowls with “Eggy” Tofu.

They’re packed with bright colored veggies, anti-inflammatory turmeric, and some seriously good tasting tofu.

Ah, cauliflower rice.

A definite staple in my meal rotation.

Don’t get me wrong, I love me a good cauliflower rice burrito bowl, which is really my (and probably yours, too, right?) go-to cauliflower rice recipe.

Lately I’ve been doing this thing when I don’t have dinner, I just rip open a pack of frozen cauliflower rice into the skillet and LOAD. IT. UP.

It’s totally normal to eat an entire bag of cauliflower rice for dinner, right?

Lie to me.

Anyway, I decided that I was tired of the whole Mexican thing, and decided to go for a different take on things with a shake of turmeric and the addition of a colorful vegetable blend.

I had tofu left in the fridge, so I made a quick scramble on the side for protein and then threw both creations together.

The most random meal ever, right?

But this is how the best recipes are born, buds.
