I’ve always been what I like to call “sleep in defective”.
In high school I would wait impatiently on the weekends for my boyfriend and friends to wake up.
I was itching to text them before noon, knowing full well I wouldn’t receive a response until lunchtime or past.
As an adult, the early morning trend continued and serves me well to keep me in my professional workweek routine.
The consistency of the workweek cascades into the weekend so I pretty much always wake up at the same time.
Even when I’m (occasionally) out until the wee hours of the morning, I wake up before my iPhone reads 8:00 AM in glowing white light.
So imagine my surprise when this week I woke up one day at 9 AM!
Yes, I know, I was shocked, too, and did a double and triple take on the time.
Lately I’ve been leaning into stolen hours of sleep, lazy mornings, and sweet languid breakfasts.
I have the perfect sweet breakfast for you to make on a lazy morning.
These Paleo Chocolate Chip Waffles are made with almond flour, cacao powder, and plenty of dark chocolate chunks for a fun breakfast.
Whether you sleep in until noon or catch the sunrise, these waffles are easy to make to sweeten your AM!
For the longest time pancakes were my favorite weekend breakfast because they’re delicious but also because I didn’t have a waffle iron.
And now that I finally do have a waffle iron, I’m excited to mix things up with some waffles recipes.
That’s right– this is the very first waffle recipe on Flora & Vino!
And it just so happens to be vegan, gluten-free, refined-sugar-free, and paleo friendly.
Here’s what you need:
- ground flaxseed
- super-fine almond flour
- canned coconut milk lite
- Hu Kitchen Gems
- raw cacao powder
- pure maple syrup
- baking soda
- Himalayan sea salt
That’s it!
The waffles are almond flour based with canned coconut milk to keep the mixture oil-free yet packed with creamy whole food fats.
They’re naturally sweetened with pure maple syrup and packed with double chocolate from raw cacao powder and Hu Kitchen Gems.
All you need to do is mix the ingredients in a bowl, pour them in a heated waffle maker, and wait 4-5 minutes for them to heat.
If the chocolate chips stick to the waffle iron a little, that’s OK!
Enjoy these Paleo Chocolate Chip Waffles as an easy weekend breakfast.
You can also make a batch of waffles in advance and enjoy them throughout the workweek by reheating in the toaster.
I love mine served with maple syrup and more chocolate chips on top.

Description

Ingredients
- 2 TBSP ground flaxseed meal + 6 TBSP filtered water (2 flax eggs)
- 1 1/2 cups almond flour
- ⅓ cup canned coconut milk lite
- ¼ Hu Kitchen Gems
- 1 TBSP raw cacao powder
- 1 TBSP pure maple syrup
- ½ tsp baking soda
- pinch of Himalayan sea salt
Instructions
- Spray your waffle iron with avocado oil and preheat.
- While the waffle iron heats up, whisk up the flax egg in a mixing bowl and allow to gel for ~5 minutes.
- Add in the coconut milk and maple syrup and mix to combine.
- Next, add in the almond flour, cacao powder, maple syrup, baking soda, and Himalayan sea salt. Mix thoroughly. The mixture should be thick but pourable.
- Lastly, add in your chocolate Gems.
- Pour the mixture into the waffle iron and heat until cooked throughout and golden brown on the outside, ~4-5 minutes.
- Serve immediately with pure maple syrup and more chocolate chips, if desired.

I followed the recipe to the tee and The batter was sooo thick. It wouldn’t pour or spread out on the waffle iron. I had to take it out of the waffle iron and add a lot more milk. Sorry but it was a disaster. I checked over the recipe 3 times to make sure I folded it. Sorry

Followed the recipe exactly and was too thick so added a little more coconut milk. It was like super glue in the waffle maker – I couldn’t get it open! Epic fail in the waffle iron. The flavor of the crumbs I had to scrape were good but man.
