I’ve been on a *huge* peanut butter and jelly kick recently, friends.
I think I approach the classic combination of fruit and nut butter with more curiosity after M explained that it really isn’t a thing in Germany.
It’s hard for me to divorce the nostalgia of childhood from mixing sweet jam and nut butter…in any form.
With berry season well on its way, I thought I should get a head start on making recipes bursting with berries.
Whether you grew up on PB&J or are entirely new to the combination, you’re going to love this post.
These PB&J Yogurt Parfait are my latest breakfast obsession.
They’re so easy to meal prep in advance or layer together in less than 5 minutes the morning.
This yogurt parfait is breakfast perfection.
It’s packed with plant-based protein, healthy fats, and fresh berries.
As you can probably tell from the photos, this recipe isn’t rocket science!
It’s super easy, but I’m sharing it anyway, because, just because something is easy doesn’t mean everyone has thought of it, you know?
And if you *have* thought of it, well– great minds think alike.
What You Need to Make PB&J Yogurt Parfait
On that note, here’s what you need to make a PB&J Yogurt Parfait:
- crunchy or creamy salted peanut butter
- unsweetened almond milk yogurt
- berries (I love strawberries or raspberries!)
- your favorite granola
That’s it!
Peanut Butter Tips
For the peanut butter, I recommend using a crunchy and salted PB for this recipe.
I found the hit of sea salt and crunch takes this yogurt bowl to the next level!
If you’re really not a peanut butter person, or are avoiding peanuts for any reason, this recipe can be made with any nut or seed butter.
Try making it with almond butter, cashew butter, or sunflower seed butter instead.
Use Your Favorite Plant-Based Yogurt
If you have a favorite plant-based yogurt, use it in this recipe!
I personally prefer an unsweetened yogurt without any added sugars, so the natural flavors of the berries can shine through.
My favorite unsweetened vegan yogurts are Kite Hill Plain Original Almond Milk Yogurt and Forager Unsweetened Plain Cashewmilk Yogurt.
How to Choose Your Berries
For berries, I went classic with fresh diced strawberries.
However, any berry will work for this parfait!
Mix it up by subbing the strawberries for fresh raspberries, blackberries, or blueberries.
How to Make PB&J Yogurt Parfait
The method to this recipe is super simple.
All you do is layer the ingredients in a mason jar as written in the recipe.
You can play with different laying combinations, but the one pictured is my favorite!
I love digging to the bottom with my spoon to get a bit of peanut butter with every bite.
Notes on Meal Prep
Cover the jar and place in the fridge for up to 5 days for an easy breakfast or snack!
If you’re meal prepping these jars, I recommend leaving the granola out of the layering.
The granola will take on the moisture of the yogurt and berries and get a bit soggy over time.
For the crunchiest, tastiest, granola, add the granola on top just before serving!
I like to drizzle mine with some more peanut butter on top, too, just ‘cuz.
