Life has been decidedly and deliciously slower the past two weeks.
After a busy week of travel, M and I took an unplanned “staycation” to catch up on sleep, life, and work.
Aside from going out for the necessities, AKA groceries, indoor rock climbing, and Nagadi coffee, the car has remained watchful in its parking spot.
At first I fought the rest, trying to find productivity in the stillness, achievement in the sleep, and accomplishment in the quiet.
But then I settled into these long and languid summer days.
Reading ACOTAR with M nestled into the couch, playing card games with our new Yellowstone deck, eating ice cream until my tongue is numb and tasteless.
It seems like since we got back into town the summer produce scene exploded overnight.
The zucchini looks greener, heirloom tomatoes are bigger, and the peaches are juicier.
Today’s recipe is one that I developed before our trip, but one that I came back to afterwards because it’s easy, filling, and screams summer!
AKA perfect for our summer vacation, staycation, and everything in between.
These Peaches ‘N’ Cream Overnight Oats are made with vegan yogurt, rolled oats, and peaches.
It’s perfect to make in advance for a healthy breakfast to fuel you for whatever summer has in store for you.
What You Need to Make Peaches ‘N’ Cream Overnight Oats
Here’s what you need to make Peaches ‘N’ Cream Overnight Oats:
- unsweetened almond milk
- unsweetened almond milk yogurt
- frozen peaches
- pure maple syrup
- Bob’s Red Mill Gluten-Free Organic Old-Fashioned Rolled Oats
- chia seeds
That’s it!
How to Make Peaches ‘N’ Cream Milk
The first step to making these Peaches ‘N’ Cream Overnight Oats is to make a homemade peach milk.
This is super easy to make with fresh or frozen peaches!
I opted to use frozen peaches for ease, but you can also use fresh peaches for the best flavor.
If you use fresh peaches, be sure to remove as much of the skin as you can.
Add the almond milk, almond milk yogurt, frozen (or fresh) peaches, and maple syrup to a high-speed blender or food-processor.
Blend everything on high until it’s smooth and creamy.
If you used frozen peaches this will take a few minutes!
How to Make Peaches ‘N’ Cream Overnight Oats
Divide the oats and chia seeds between two mason jars, then continue to divide the peach milk between the two mason jars.
Stir both jars with a spoon to lightly mix everything and refrigerate them overnight.
That’s it!
Alternatively, you can add the ingredients to one large mason jar or air tight container and portion out the mixture the next morning before serving.
I usually like to have mine pre-portioned for an easy grab ‘n’ go meal, but do whatever works for you!

Notes on Meal Prep
These oats are perfect for meal prep and can be stored in the refrigerator for up to one week.
To make more than two servings, try doubling or tripling the recipe for breakfast all week long.
On the day of serving, taste the overnight oats and add more maple syrup for sweetness, if you want.
Serve the overnight oats with diced peaches and a spoonful of your favorite granola.
You can also add a scoop of nut butter for extra decadence.
Feel free to add whatever toppings you’d like!

Ingredients
Peaches ‘N’ Cream Overnight Oats
- 1 cup unsweetened almond milk
- 1/3 cup unsweetened almond milk yogurt
- 1 cup fresh or frozen peaches, peeled
- 1–2 TBSP pure maple syrup (depending on how sweet you want it)
- 1 cup Bob’s Red Mill Gluten-Free Organic Old-Fashioned Rolled Oats
- 4 tsp chia seeds
For serving
- diced peaches
- a few spoonfuls granola
Instructions
- Add the almond milk, almond milk yogurt, frozen peaches, and maple syrup, to a high-speed blender or food-processor and blend until smooth and creamy.
- Divide the oats and chia seeds between two mason jars. Divide the peach mixture liquid between the two mason jars.
- Lightly mix the jars with a spoon and refrigerate them overnight.
- In the morning, taste the overnight oats and add more maple syrup for sweetness, if you want.
- Serve the overnight oats with diced peaches and a spoonful of your favorite granola.
- Store the overnight oats in the refrigerator for up to one week.
