Did I tell you guys that I’m working on a cookbook?
OK, don’t get *too* excited.
By “working”, I really mean polishing the idea in my mind, tumbling the concept from synapse to synapse in hopes one of them will fire up and spit it out.
One of my friends recently joked that I consider putting out a cookbook called “Quarantine Cuisine” with fun plant-based recipes to make during the pandemic.
I mean, it does have that ring to it, right?
For the most part, though, this space on the internet and my content on Instagram keeps me busy, even during these tumultuous times.
In the light of recent events, I do feel called to show up in different ways, like getting back to staple recipes.
There are so many combinations I enjoy on a regular basis but don’t share with you, because I feel like they’re too “elementary”.
These Peanut Butter & No-Jelly Overnight Oats are one of those said combos.
For the last few weeks I’ve been preparing them in mason jars in the fridge with plenty of drippy peanut butter, smashed strawberries, and flaxseed meal.
Basic breakfast BAE.

The Easiest Overnight Oats
To be honest, my eating has been all over the place the past few weeks.
Anyone else?
I feel as though I’m simultaneously eating too much and too little.
I know stress plays a huge role in my digestion, but I also think it’s that I’m eating different as I switch from eating tons of raw salads to eating more non-perishables and cooked food.
Luckily, these Peanut Butter & No-Jelly Overnight Oats are easy on the digestion.
They’re packed with protein, healthy fats, and complex carbs.
The soaked oats go down easily in the AM even when I wake up with my stomach in knots, spooning overnight oats into my mouth as I watch BREAKING NEWS flashing across the news screen.
What You Need to Make Peanut Butter & No-Jelly Overnight Oats
Here’s what you need:
- gluten-free old-fashioned rolled oats
- golden flaxseed meal
- unsweetened almond milk
- all-natural peanut butter
- pure maple syrup (optional)
- organic strawberries (fresh or frozen)
That’s it!
For the strawberries, you can use either fresh or frozen.
If using frozen strawberries, allow them to thaw completely in the fridge before mashing them into this recipe.
For the peanut butter, I recommend using an all-natural peanut butter where peanuts are the only ingredient!
How to Make No-Jelly
OK, so, the first assumption we need to squash here is that all PB&J recipes need to include jelly or jam.
It does not.
Instead of using actual jelly, I smashed up fresh strawberries for a “jammy” feel and flavor without any added sugars.
I found my berries to be sweet enough on their own to jazz up these oats without any extra sweetness.
If you’re looking for a touch more sweetness, try adding 1-2 teaspoons of pure maple syrup to enhance the natural sweetness of your berries!
You could also add a pinch of coconut sugar or date paste.
How to Make Peanut Butter & No-Jelly Overnight Oats
This recipe is different from most of my overnight oats recipes because it calls for flaxseed meal instead of chia seeds to help bulk up the oats.
If you don’t have ground flaxseed on hand, try using chia seeds instead.
I love the way the nutty flax compliments the flavor of the peanut butter in this combination!
The method is so simple– mix everything in a mason jar the night before and wake up to peanut butter and jelly in overnight oat form.
Oh, and it’s normal for the oats to be slightly stiff after absorbing all the moisture overnight.
I like to uncover my oats, give them a nudge with my spoon, and add more unsweetened almond milk as needed to reach the best consistency.
Now you’re ready to serve!

Peanut Butter & No-Jelly Overnight Oats

Description
Peanut butter and jelly overnight oats with fresh fruit, peanut butter, gluten-free oats, and flaxseed. Perfect for meal prepped breakfast!
Ingredients
- 1/2 cup gluten-free old-fashioned rolled oats
- 1 TBSP golden flaxseed meal
- 1/2 – 2/3 cup unsweetened almond milk
- 1.5–2 TBSP all-natural peanut butter
- 1–2 tsp pure maple syrup (optional)
- 1/2 cup organic strawberries (fresh or frozen), diced or mashed
- Optional: peanut butter, fresh sliced strawberries, your favorite granola
Instructions
- Add diced strawberries to a bowl and lightly mash. Some chunks are okay, and actually preferred!
- Add all ingredients to a mason jar and stir gently to combine.
- Refrigerate overnight.
- Taste in the morning and add optional maple syrup for sweetness.
- Serve with peanut butter drizzle, fresh sliced strawberries and your favorite granola.
