It’s been a long day that just keeps going and you’re completely out of snack options.
Or maybe you’ve got all your snack options around but you’re just really freaking tired of them.
In times like this, keeping it simple is important.
These Peanut Butter Stuffed Dates were born from one of these exact circumstances.
It was a Sunday and I hadn’t been to the grocery store so the fridge was bare bones and my need for a snack was dire.
In a moment of inspiration, I grabbed a Medjool date, pitted it, then spooned in peanut butter and finished it with dark chocolate chips.
The moment I sunk my teeth in I new it wouldn’t be the first time I had this pairing.

Try them out for a quick snack or dessert when you’re in a pinch!
What You Need to Make Peanut Butter Stuffed Dates
I’m pretty certain that you have all of these ingredients in your pantry; let’s check!
Here’s what you need:
- Medjool dates
- peanut butter (or any nut/seed butter)
- dark chocolate chips
- hemp hearts (optional)
That’s it!
How to Make Peanut Butter Stuffed Dates
First, select your dates.
Make sure to use the ooey and gooey Medjool dates are in this recipe and save the dried up ones for something else.
Place the pitted dates on a plate.
Spread ½ TBSP nut butter into the center of each pitted Medjool date.
We measure peanut butter with our heart, so don’t sweat it if the nut butter is a little under of over 1/2 TBSP.
I love peanut butter in mine but any nut or seed butter will work.
Sprinkle the stuffed dates with dark chocolate chips and optional hemp hearts and serve them immediately!
Swaps and Substitutions
You can use any variety of dates for this recipe, however, I’m partial to Medjool dates because they’re the perfect size and shape for stuffing!
If you’re not a peanut butter fan, you can use any nut or seed butter for this recipe.
Sunflower seed butter and almond butter or two runner up favorites for me in this recipe, but honestly, you can’t go wrong with any!
I love dark chocolate chips, but feel free to add your own toppings like chopped nuts, granola, or shredded coconut.
How to Serve Peanut Butter Stuffed Dates
These peanut butter stuffed dates are perfect for a quick and energizing snack.
You can make them in advance and store them in the fridge for later, but I love making them on the fly.
In the afternoon, instead of grabbing a pre-packaged bar, grab a date and smother it with PB and chocolate.
You’re going to love how decadent it tastes while being packed with complex carbs, healthy fats, and protein to keep you happy and satiated.
