It’s Smoothie Bowl season!
By now most of you have tried throwing a handful of kale or spinach into the blender, and you might even be on the frozen cauliflower train, too.
So I was thinking it’s time we branch into some more distinctive veggies.

Allow this Pink Pepper Pitaya Smoothie Bowl to be the perfect peppery introduction.
I bought a creative smoothie recipe book a while back that’s been sitting on my shelf collecting dust.
It was a quirky book with a new beautifully eccentric recipe on each page.
When I opened it and saw savory and sweet smoothies packed with an array of vegetables and fruits alike, I shut the paperback in disgust and went back to blending my frozen fruits in bliss.
Friends, don’t be like blissfully ignorant like my former smoothie bowls!
Don’t be afraid to throw some unexpected vegetables in the blender with your fruits.
Now, if I don’t add a dose of veg to my smoothies and smoothie bowls, I feel like something is missing.
It really does feel like the ultimate veggie ninja move, and you know how I strive to be a veggie ninja.
I love adding frozen cauliflower to smoothies and smoothie bowls so much that I decided to experiment with steaming and freezing other vegetables to add in.
The sweetness of the bell pepper pairs perfectly with pitaya in this bowl to create a bright summer favorite.
If you’re feeling some serious apprehension about adding bell peppers to your breakfast, start in small increments!
Add 1/4 cup or less to start off with and work your way up to what works for you.
I recommend steaming your vegetables before freezing because it makes them easier to digest and mellows out the taste.
I used orange bell pepper in my bowl, but any sweet pepper will work.
Avoid using green bell pepper in this bowl because it will have a bitter taste.
Enjoy this smoothie bowl as a quick and easy breakfast.
I like to enjoy mine on Sundays after my run!

Description
Delicious banana-free smoothie bowl with frozen pitaya, berries, and sweet bell pepper. Perfect for a unique sweet breakfast or snack.
Ingredients
Smoothie Bowl
- 1 cup unsweetened almond milk
- 1/2 cup steamed and frozen bell pepper
- 1/2 cup frozen strawberries
- 1/4 cup frozen cherries
- 1 frozen Pitaya Plus packet
- 1 scoop vanilla protein powder
- 1 TBSP cashew or almond butter
Toppings
- fresh sliced strawberries
- white chia seeds
Instructions
- Steam and freeze your bell pepper in advance– at last 8 hours before making the bowl.
- And all ingredients to a blender and pulse until well combined and creamy, scraping down on the sides as needed.
- Spoon mixture into a bowl and top with strawberries and white chia seeds.
- Serve immediately!
