Confession: I’m REALLY bad about writing down my recipes.
I know, I know, for shame.
You see, most of them are so startlingly simple, I just kind of will myself to remember while doing some serious taste-testing.
Note to self: New Years Resolution #1…Record ALL the yums.
Luckily, I found an old archived Instagram post that jogged my memory on the measurements for these cookies that are your pumpkin and pecan pie all tied into one.
These Paleo Pumpkin Pecan Pillow Cookies are a recipe you won’t want to misplace.
I first created these Paleo Pumpkin Pecan Pillow Cookies about a year ago.
I remember taking them out of the oven and telling Dan quite seriously, “If these work, I might be a genius.”
Yeah, I get cocky when I bake.
You might, too, when you’re smiling down on these morsels that you created with four simple ingredients (five if you want to get fancy with the pecan halve topping!).
I’m dying for you to discover why I called these treats “Pillow” Cookies.
The name came to me when I took them out of the oven and saw how perfectly fluffy they were.
Don’t be alarmed if they seem a bit undercooked coming out of the oven.
They set up a bit after cooling, but the grain-free nature of the cookie makes them on the fudgier and softer side.
These are pillow cookies, not rock cookies, friends.
Biting into them is like chewing on sweet pumpkin spiced clouds.
Can you taste it?
The mixture of pumpkin and Georgia Grinders Pecan Butter make them completely grain-free, moist, and luscious.

Paleo Pumpkin Pecan Pillow Cookies
- Total Time: 30 mins
- Yield: 12-16 cookies

Description
Easy grain-free cookies made pumpkin and pecan butter sweetened with maple syrup. Perfect to meal prep for healthy snacks, dessert, or even breakfast.
Ingredients
- 1 cup Georgia Grinders Pecan Butter (or sub any nut butter of choice!)
- 1/2 cup pumpkin puree
- 2 TBSP maple syrup
- 1/4 tsp pumpkin pie spice
- whole pecans for topping (optional)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine all of the ingredients in a large mixing bowl and stir everything until it’s well combined.
- Use a cookie scoop to drop ~1.5 Tablespoon balls onto the parchment paper (don’t flatten them!). The unbaked cookies should be dome-shaped.
- Gently press one pecan halve onto each cookie.
- Bake the cookies for 20-25 minutes, until lightly browned on the edges and firm to the touch*.
- Store leftovers in the fridge for up to one week and freeze for long term storage.
Notes
Cookies will remain soft even when “done”. They will firm up a bit after cooling but the moist texture is what makes them a “pillow” cookie!
