Description

Pumpkin Turmeric Waffles made with oats, pumpkin purée, and Navitas Organics Turmeric Powder. Serve with melted cacao for breakfast!


Ingredients

Dry

  • 4 cups organic gluten free rolled oats
  • 1 tsp baking powder
  • ¼ tsp ground cinnamon

Wet

  • 2 cups pumpkin purée 
  • 2 cups unsweetened almond milk
  • 1 TBSP lemon juice
  • ¼ tsp Navitas Organics Turmeric Powder
  • 34 TBSP pure maple syrup
  • 2 TBSP neutral nut or seed butter 

For serving


Instructions

  1. Preheat your waffle maker to the desired setting; I used medium high heat. 
  2. Add the dry ingredients to a high speed blender and process until you have a fine flour. Empty the flour into a large mixing bowl and set aside. 
  3. Next, add the pumpkin purée, almond milk, lemon juice, turmeric powder, maple syrup, and nut butter to the same blender and process until the mixture is thick and creamy.
  4. Add the blended wet mixture to the dry ingredients in the mixing bowl. Use a spatula to gently combine everything until you have a thick smooth batter without any lumps.
  5. Next, spoon ~½ – ⅔ cup batter into your waffle maker and close the lid to spread the batter to fill the mold. Cook the waffles for 2-5 minutes, depending on your waffle maker and heat settings. Waffles are done when they are brown on both sides. You want waffles to be slightly crispy on the outside and fluffy on the inside. Continue making waffles until all of the batter is used up. Depending on the size and shape of your waffle maker, this recipe will make anywhere from 4-8 waffles.
  6. To serve, add waffles to a plate and top with fresh berries, pure maple syrup, drizzled melted cacao wafers, and cacao nibs. 
  7. Store leftover waffles in an airtight container in the refrigerator for up to one week and freeze for long-term storage. Reheat waffles in the microwave in 30 seconds intervals or in the oven at 350°F for ~10 minutes, or until warmed throughout.
