Ingredients

  • 1 16-oz. bag frozen sweet corn, cooked and cooled
  • ½ cup red onion, finely diced
  • ½ cup chopped cilantro
  • ¼ tsp Himalayan sea salt
  • 1 TBSP fresh lime juice (~1 lime, squeezed)

Instructions

  1. Combine all ingredients in a bowl and toss them to combine.
  2. Taste everything and season with additional salt or lime juice as desired.
  3. Cover the salsa and refrigerate for 3-4 hours before serving, to allow the flavors to meld.
