For a short week, it certainly has felt long.
Long weeks always feel a little shorter when you have a fun snack to dream about…
With that in mind, I made these Raw Almond Butter Superfood Bars to get us (read: me) through to the weekend!
They come together with only 10 ingredients, a handful of super delicious superfoods, and an optional chocolate drizzle.

It’s been hot here, and I’m embracing the summer days and spending a little less time with the oven on.
You’re going to adore these easy nourishing bars!
They’re dense and chewy with all of the best superfood texture going on.
They only require a simple mix up and chill with zero bake time.
What Makes a Superfood?
So….what’s a superfood and what makes it super?
A quick google search will tell you that superfoods are nutrient-rich food considered to be especially beneficial for health and well-being.
Kind of anticlimactic, right?
But I assure you these bars are not.
I used antioxidant rich cacao, anti-inflammatory goji berries, creamy coconut, and sprouted walnuts as my mix-ins.
(Side note: this blend also makes a fantastic superfoods trail mix! Try it!)
What You Need to Make Raw Almond Butter Superfood Bars
This recipe is grain-free, gluten free, and refined sugar free while being packed with protein and satiating fats.
The mix begins with a rich almond butter base lightly sweetened with pure maple syrup and thickened with protein powder.
I tested coconut oil and a coconut butter versions in the batter, and both turned out great.
If you’re oil-free or just feel like avoiding oil today use softened coconut butter.
If you prefer to use coconut oil I recommend an unrefined cold-pressed oil that’s minimally processed.
The recipe calls for 1/4 cup of vanilla protein powder instead of flour to give the bars some extra protein.
If you’d prefer not to use protein powder, almond flour or coconut flour will work magic in its place!
How to Make Raw Almond Butter Superfood Bars
The batter will be a bit stiff, but that’s OK!
I like to work it into a dense ball with my hands and then press into the parchment lined pan.
Then you knead, knead, knead, baby.
As you can see in the photos, my trick for getting parchment paper to stay put in a baking pan is chip clips!

The Best Chocolate for Drizzling
The rest of the recipe is all about the chocolate drizzle, friends.
If you made my Dark Chocolate Chunk Muesli Snack Cookies, you know about my obsession with Hu Kitchen Chocolate.
Their clean chocolate is made with fair-trade cacao, unrefined organic coconut sugar, and organic fair-trade cocoa butter.
I melted a Hu Kitchen Simple Dark Chocolate to create the decadent chocolate drizzle on these bars.
If you find that your chocolate isn’t runny enough, you can add 1/2-1 teaspoon of unrefined coconut oil to thin, but I found I didn’t need it.
I also crumbled up a few squares of the Almond Butter & Puffed Quinoa Chocolate Bar for good measure in the raw bar mix, because, why the heck not?
How to Serve Raw Almond Butter Superfood Bars
Enjoy these Raw Almond Butter Superfood Bars as quick grab and go breakfast, a delicious snack, or a healthy dessert.
I love to eat mine as fun afternoon snack to get me through yoga class and all the way to dinner.
The bars will soften at room temperature, so be sure to store leftovers in the fridge or freeze for long term storage.
They pair wonderfully with a tall glass of almond milk or hot tea!

Description
Raw Almond Butter Superfood Bars packed with superfoods, antioxidants, and protein for a nutritious snack or healthy dessert.
Ingredients
- 1 TBSP unrefined coconut oil
- 1/2 cup natural almond butter
- 2 TBSP pure maple syrup
- 1/4 cup (~1 scoop) protein powder
- 1/2 cup unsweetened coconut flakes
- 1/2 cup chopped walnuts
- 1/4 cup goji berries
- 1/4 cup cacao nibs
- 2 squares Almond Butter & Puffed Quinoa Hu Chocolate bar, chopped
- 1/2 bar Simple Dark Hu Chocolate bar, melted
Instructions
- Prepare a 9×6 baking dish with parchment paper or lightly grease with coconut oil.
- Melt the coconut oil in a small saucepan over low heat until liquid.
- Add the melted coconut oil to a mixing bowl along with the almond butter, maple syrup, and protein powder and stir until it’s well-combined.
- Fold in the coconut flakes, goji berries, cacao nibs, walnuts, and chopped chocolate bar and mix until everything is well coated. The batter should be stiff and sticky.
- Press the batter into the parchment paper lined baking dish in an even layer using your hands or the back of a spatula.
- Cover the dish and refrigerate it for at least one hour or until the spread has hardened and can be easily removed from the pan.
- Once it’s firm, remove the pan from the refrigerator and slice the contents into 6-9 bars. They’ll be a bit crumbly; that’s OK! These bars are all about texture.
- Heat the chocolate bar over medium low in a small saucepan if you want to garnish with optional chocolate drizzle. Once it’s warm and melted, drizzle the chocolate over the raw bars. Serve immediately or wait about ~1 hour for the chocolate to harden.
- Store leftover raw superfoods bars in the refrigerator for up to one week and freeze them for longterm storage.
