I know we talk a little about nutrition here on the blog, but I try to keep it vague and unspecified because, DISCLAIMER, I am not a medical professional or licensed nutritionist/dietician.
Usually I like to frame my recipes in the context of what works for me and what makes me feel my best in hopes that it might do the same for you.
I definitely have a “feel good” recipe to share with you today that’s packed with fresh produce, healthy fats, and cleansing qualities.
This Red Carrot, Apple, & Beet Detox Salad requires just 6 ingredients you can mix on the spot to feel fresh and rejuvenated.
What You Need to Make Detox Salad
I’ve made variations of this detox salad for a few years now.
It usually makes an appearance on my plate in January, when, like everyone else, I resolve to add in more things that fuel my body, mind, and spirit.
The ingredients to make this salad are simple and straight forward.
Here’s what you need:
- Cal-Organic red beets
- Cal-Organic red carrots
- tart apples
- lemon
- avocado oil
- sunflower seeds or crushed walnuts
That’s it!
How to Prepare Your Produce
The salad combines red beets, tart apples, and red carrots as the base to this greens-free salad.
The mix of vitamins, minerals, and whole food fibers in these fruits and veggies aid your body in detoxing!
Together, this trio helps flush the body of everything that isn’t serving you.
Plus, it tastes amazing too.
The mix of sweet carrots, earthy beets, and tart apple is so juicy, crisp, and vibrant.
Try peeling the beet and carrot for the best taste and texture, but you can leave the skins on your apple.
I find this recipe works best with tart green apple to offset the sweetness of the root veggies.
Cal-Organic Farms Produce
If you notice that the carrots in this salad look a little more red than orange, you are correct, because this salad uses red carrots!
Cal-Organic Farms red carrots are harvested in Coachella Valley, CA in the desert growing region) and are in season late December through the end of March.
If you’ve never had red carrots before, the red variety is super sweet and features a beautiful red tint through the root of the carrot.
Fun fact: While red carrots are new in stores, they’re actually among some of the oldest carrot varieties first cultivated in the Middle East.
I love the sweet flavor and beautiful vibrancy they add to this simple detox salad.
Check stores like Wegmans, Whole Foods, and Safeway to find Cal-Organic Farms red carrots in a store near you!
If you can’t find red carrots, use the classic orange carrot or any color carrot in this recipe as replacement.
How to Make Red Carrot, Apple, & Beet Detox Salad
Don’t you love when the directions are shorter than the recipe list?
The method here is simple and effective– throw everything in a bowl, toss, and serve.
The hardest part of this recipe is shredding the carrots, apples, and beets.
Luckily, you have some flexibility in format,
I’ve tried mine diced, shredded, julienned, grated, and roughly chopped; all delicious.
If possible, I find that a finer shred/grate is ideal here to allow the flavors to really meld.
Try using a food processor or box grater to achieve an even shred for all fruit and veg.
I recommend starting with the green apple, then moving to the carrot, and finally shredding the beet.
The beet juice will turn everything red so try adding this last if you’re concerned about aesthetics!
How to Serve Red Carrot, Apple, & Beet Detox Salad
Enjoy this Red Carrot, Apple, & Beet Detox Salad as a simple side salad to make you feel fantastic.
Personally, I enjoy this salad when I feel off and want to reset my digestion and elevate my energy and mood.
Finish everything off with a big squeeze of lemon and a drizzle of avocado oil for an easy “dressing”.
I topped my detox salad with sunflower seeds for creamy crunch.
If you’re not into sunflower seeds, trying using walnuts instead for the same texture with a slightly different taste.
I like using a raw nut or seeds or a roasted but unsalted to keep the recipe entirely salt-free.
If you’re making the salad in advance wait to add the nuts or seeds until just before serving to ensure they retain their crunch.

Description

Ingredients
- 1 bunch (~2 cups) peeled and shredded Cal-Organic red beets
- 1 bunch (~2 cups) peeled and shredded Cal-Organic red carrots
- 2 tart green apples, diced
- 1 lemon, juiced
- 4 tsp olive oil
- ½ cup sunflower seeds or chopped pecans
Instructions
- Combine all ingredients in a bowl and toss together.
- Serve as a side or on top of greens.
- Store leftovers in the refrigerator for 3-5 days.

Honestly, I was shocked at how much I enjoyed this salad. I thought the carrots and the beets were going to be pretty difficult to get through and I actually am not a huge fan of green apples because they are so tart BUT this salad was amazing, so much so that I have saved it over a few days and continue to munch on it. The tart apple combo with the beets and carrots creates a really nice sweet balance that has been immensely enjoyable. Not to mention it is super easy to put together and really freaking healthy! I have passed this recipe on to a few people and plan to keep it in my wheelhouse to make in the future.
