I’m having one of those “get sh$!” done kind of mornings where I tackle all of those things on my TO-DO list that I didn’t realize were brain bog until they’re gone.
Whew.
The week feels lighter and it hasn’t even started yet.
In this same commitment to summer simplicity, I’m keeping my breakfasts light and breezy lately.
These Roasted Strawberry Yogurt Bowls are the perfect way to use up extra berries and create a fun spin on your (occasionally) too predictable yogurt bowl.
All you need is an excess of berries, your favorite yogurt, and some fun mix-ins!

If you follow me on Instagram, you know that I LOVE berries.
They’re my favorite fruit because they tend to be a little lower sugar and always make my mornings feel a little brighter.
Usually I throw them on my yogurt bowls fresh and simple (delicious), but sometimes I like to mix things up with some heat.
We went strawberry picking a few weeks ago and I came home with way too many berries.
What’s a berry lover to do with an excess of fresh strawberries?
…Roast ’em.
Why You Should Roasted Strawberries

The concept is so simple and yet it still blows my mind each year when I bring it back into the recipe rotation.
If you’ve never tried roasting fruit before, this recipe is the perfect place to start!
Get ready for strawberry pie filling feels with only two ingredients.
What You Need to Make Roasted Strawberry Yogurt Bowls
Here’s what you need to make roasted strawberries:
- strawberries
- maple syrup
And here’s what you need for the yogurt bowl:
- unsweetened yogurt
- vanilla protein powder
- gluten-free granola
- fresh berries
That’s it!
How to Make Roasted Strawberry Yogurt Bowls
Drizzle your ripe strawberries with a little bit of maple syrup and watch them transform into glistening caramelized triangles in the oven.
I like mine with a bit of maple syrup to give the berries a syrupy sweet feel, but if you’re watching sugar, you can roast the strawberries plain, too!
Just throw them on the baking sheet and the oven will do the rest to draw out their natural sweetness.
Watch the strawberries in the last few minutes to make sure you don’t over-bake them.
You want them to be soft and gooey, but not too fragile that they bake down to a pulp.
I definitely burned a finger or two (and my mouth) plucking these beauties straight from the baking sheets warm.
SO. GOOD.
My Favorite Granola
You’re going to love these yogurt bowls.
They’re kind of a cross between a strawberry crumble and a a yogurt parfait.
Basically, dessert for breakfast.
I like to serve mine with ~1/4 cup of grain-free gluten-free granola to mimic a healthier version of a “crumble” or pie crust crunch.
The yogurt is like whipped cream!
My Favorite Yogurt
Yogurt, my old stand by, is quickly making a come-back in my fridge, especially for weekend breakfasts when I wake up a little later and lazier.
As far as yogurts go, I prefer mine classic and unsweetened so I can go crazy with toppings for sweet flavor instead.
Like all of the roasted strawbs, duh.
I’m currently obsessed with Kite Hill Unsweetened Greek Yogurt, and used it to build-a-bowl here.
Notes on Meal Prep
If you’re a meal prepper like me, or serving for one, you can still make this recipe!
Try roasting your strawberries on Sunday, enjoy your fill for brunch, then store and stash them to use as yogurt bowl toppings all week.

They’re also perfect on pancakes, toast, oatmeal, cereal, dessert– you name it.

I love to load mine up with my favorite granola, a tablespoon of protein powder for good measure, and additional fresh berries for breakfast.

Some topping ideas are: sprouted nuts and seeds, dried fruit, shredded coconut, and cacao nibs.

Description

Ingredients
Roasted Strawberries
- 1 pint strawberries, hulled and sliced lengthwise
- 1 TBSP pure maple syrup (optional)
Yogurt Bowl
- 1 cup your favorite unsweetened almond or cashew milk yogurt
- 1 TBSP vanilla protein powder (optional mix-in)
- 1/4 cup gluten-free granola
- fresh berries (optional)
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Hull and slice the strawberries and distribute them in an even layer on the baking sheet.
- Toss the strawberries with a drizzle of maple syrup and transfer the baking sheet to the oven. Bake the berries until they’re caramelized and juicy (but not falling apart!). This will take out about 15 – 20 minutes.
- To make the roasted strawberry yogurt bowls, serve the strawberries warm over yogurt with granola and fresh berries. Enjoy immediately!
- Store leftover roasted strawberries in a glass container in the refrigerator for up to one week and assemble yogurt bowls before serving.

Hello, do you think you could you use liquid Stevia in place of maple syrup when roasting strawberries?
Hi there! I’ve never experimented with stevia, but I imagine it would work! Be sure to check the ratio because depending on how “sweet “stevia is, you may want to use less to achieve the desired sweetness. Let me know how it turns out!
