It feels like M and I have been away more this fall than we’ve been home!
I can’t complain, because it’s all good things filling up our calendar.
This past weekend we were near Charlottesville, VA, exploring the outdoors and celebrating one of my friends’ birthdays.
We hiked Humpback Rocks and visited some local breweries and good eats all while staying at a beautiful B&B.
We arrived home last night and stuffed our suitcases up in the attic storage until next year.
As much as I loved all of our travels from this past year, I’m equally excited to cozy up at home until 2023.
That’s not to say that we don’t have things planned– there’s holiday parties and game nights and social engagements on the horizon, for sure.
But they’re all day trips and events that will find us sleeping in our own bed at the end of the day.
The temperature also dropped about 20 degrees this weekend, from the mild 60’s to the much chillier 40’s.
So I’m ready to make all of the cozy comforting food until it’s time to bring out the holiday menu.
This Sesame Tahini Soba Noodles is the quickest, most comforting meal I’ve made in a while.
It’s ready in under 30 minutes for a cozy better-than-takeout plant-based meal!
What You Need to Make Sesame Tahini Soba Noodles
Here’s what you need to make Sesame Tahini Soba Noodles:
- Eden Foods Organic Buckwheat Soba Noodles
- broccolini
- avocado oil
- Tamari Lite
- tahini
- lime
- pure maple syrup
- garlic chili paste
- garlic powder
- ground ginger
- toasted sesame oil
- edamame
- green onion
That’s it!
How to Make Prep the Vegetables
First, let’s prepare our vegetables!
I chose broccolini for this recipe but any vegetable will work.
If you can’t find broccolini, chopped broccoli or will work here, too!
You can also add sliced carrots for a little extra color.
I think mushrooms, bell pepper, or zucchini would be delicious in this dish, too!
Preheat the oven to 400°F and line a baking sheet with parchment paper.
Add the chopped broccolini to the sheet pan and drizzle with the avocado oil.
Massage the avocado oil into the florets until they’re well-coated.
Transfer the sheet pan to the oven and bake the broccolini for about 10-12 minutes, until it’s tender and lightly browned.
Eden Foods Buckwheat Soba Noodles
Next, prepare your soba noodles.
I used Eden Foods Organic Buckwheat Soba Noodles to make this recipe.
These 100% whole-grain noodles are made from only two ingredients – 100% whole grain organic buckwheat and purified water.
For a long time eating gluten-free, I avoided eating Buckwheat because I incorrectly assumed that it was a wheat.
Despite its name, buckwheat is not a wheat and isn’t even related to wheat!
Buckwheat protein is a special grain because it contains all of the essential amino acids.
It has a delicious rich, smooth, cozy flavor that you can enjoy hot or chilled.
I *love* mine hot in this easy noodle dish.
How to Make the Sesame Tahini Sauce
While the noodles are cooking, whisk up your sauce.
In a small bowl, whisk together the garlic, ginger, Tamari Lite, tahini, lime, maple syrup, and chili paste.
The addition of tahini in this sauce makes it super rich and creamy to coat your soba noodles.
Set the sauce aside.
How to Make Sesame Tahini Soba Noodles
Now it’s time to put everything together!
Heat the sesame oil in a large pan and add the baked broccolini, cooked noodles, pre-mixed sauce, edamame, and green onions once it’s warm.
Cook everything for about 2-3 minutes, until the noodles, broccolini, and sauce are well incorporated and warm.
You might need to use a fork to lightly tease the soba noodles to mix with the edamame and green onions.
It doesn’t have to be perfect; you just don’t want large chunks of noodles.
How to Serve Sesame Tahini Soba Noodles
Once everything is well mixed and warm, it’s time to dish out the noodles.
Serve the soba noodles immediately topped with sesame seeds and sliced green onion.
You can also add a dash of sriracha or hot sauce for some extra heat.

Sesame Tahini Soba Noodles

Ingredients
- 1 (8-oz.) package Eden Foods Organic Buckwheat Soba Noodles
- 1 large bunch or two small bunches of broccolini, chopped into thin strips
- 1/2 TBSP avocado oil
- 3 TBSP Tamari Lite
- 1 TBSP tahini
- ½ lime, squeezed
- 1/2 TBSP pure maple syrup
- 1 tsp of garlic chili paste
- ¼ tsp garlic powder
- ¼ tsp ground ginger
- 1 TBSP sesame oil
- 1 cup edamame, steamed
- 1/4 cup green onion, sliced (green parts only)
For serving
- green onion, sliced
- sesame seeds
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper. Add the chopped broccolini to the sheet pan and drizzle with the avocado oil. - Serve the noodles immediately topped with sesame seeds and green onion.
