I thought that achieving that kind of adoration from another human being meant that I had achieved something great, that I was something good, that I was enough.
And, actually, I’ve been fortunate enough to love and be loved by some incredible people in my life so far.
Partners, best friends, and family.
So there has been no shortage of love and affection in my life and I’m so grateful for the opportunities to learn and grow from each relationship.
But what I realized recently is that maybe that singular person that I promised myself when I was young isn’t going to come.
Because maybe that person is already with me.
I love you, M, but the person that I’m talking about is…me!
It’s both empowering and a little embarrassing to realize that maybe she’s been there all along, cheering, comforting, and constant.

Instead of looking for external validation to feel good, great, and enough, let’s create that dialogue internally.
I don’t know about you, but treating myself to something chocolate and sweet is one of my favorite ways to say to myself, “I freaking love chocolate (and you)”.
This Single Serve Double Chocolate Chunk Cookie is the perfect recipe when you need a solo chocolate cookie fast.
It has an almond flour base and is made entirely grain-free and gluten-free and packed with dark chocolate chunks!
Happy Valentine’s Day, boo, the person you’ve been waiting for is you, and the cookie you’ve been waiting for is this one.
What You Need to Make a Single Serve Double Chocolate Chunk Cookie
If you’re making a single serve cookie, you are already invested in keeping it simple, right?
So these ingredients are easy pantry staples that you probably already have on hand.
Here’s what you need:
- ground flaxseed
- pure maple syrup
- almond butter
- unsweetened almond milk
- raw cacao powder
- superfine almond flour
- Endangered Species Oat Milk + 55% Dark Chocolate Bar
- chopped pecans (optional)
That’s it!
How to Make a Single Serve Double Chocolate Chunk Cookie
This cookie is ready in just a 15 minute bake time!
First, preheat the oven to 350°F and line a baking tray with parchment paper.
Mix the ground flaxseed and filtered water together in a small mixing bowl and allow to sit for ~5 minutes to gel.
Add the maple syrup, almond butter, and almond milk and stir everything to combine.
Next, add in the cacao powder and almond flour and stir again to form a cookie dough.
Fold in the chocolate chunks and optional chopped pecans.
Use a spoon or spatula to form the batter into one large cookie on the lined baking sheet.
I like to top with more chocolate chunks and chopped pecans, for aesthetics, and because more chocolate is never a bad thing!
Bake the big cookie for 14-15 minutes, or until it’s golden brown underneath and around the edges.
Remove the cookie from the oven and allow it to cool for 10-15 minutes before serving.
Enjoy immediately with no leftovers!

I like to roughly chop up 1/2 a bar and add it to this cookie, with more for topping.
You can use a knife to chop it into asymmetric pieces, or just use your hands!

Swaps and Substitutions
I wanted this cookie recipe to be adaptable so that you can make it whenever, wherever.
So, here are some swaps you can make if you want to make this cookie with different ingredients.
The maple syrup can be replaced with any liquid sweetener, like date paste or honey.
You can swap in any nut or seed butter instead of using almond butter.
If you don’t have almond milk, you can use any plant-based milk of your choosing.
Of course, you can also use Endangered Species Oat Milk Dark Chocolate Chips instead of a crushed bar.
I like to mix in chopped nuts for some texture, but you can leave them out!
How to Serve Single Serve Double Chocolate Chunk Cookie
This cookie is perfect to bake when you’re craving a single cookie and don’t want any leftovers.
It’s also excellent to make if you’re wanting chocolate but a simple chocolate bar won’t do.
Although this is technically a cookie, this Single Serve Double Chocolate Chunk Cookie is made with healthy fats, fiber, and protein.
So I think this cookie, while delicious for dessert, might also be suitable for a sweet snack.
Enjoy it with melty chocolate chips and a mug of something warm.
It’s also delicious with a tall glass of unsweetened almond milk.
