My figure eight knot is looking a lot more recognizable as an 8 instead of a mess of twisted rope and my stopper knot actually stops.
Also, we had a pretty solid makeshift anchor situation going, guys.
The rope looped around the stairway banister and cascaded down the steps to the basement.
As I ascended steps, I practiced the motion of belaying.
We’re packing the car tonight with the supplies and gear and FOOD.

You Need to Try Dates and SunButter
When I first stuffed the pitted center of a juicy Medjool date with SunButter and took a bite I think I made audible exclamations while chewing, because it was (read: IS) *that* good.
I first saw the combo floating around Instagram with that caption, “You’ve got to try this.”
So I did.
After falling in love with the combination, I knew I needed to explore the SunButter vs. date combo more thoroughly.
Because they’re made for each other and they’re made for bliss balls!
So, I’ll tell you like I was told years ago on Instagram; friend, you’ve got to try this!
SunButter Date Balls for Meal Prep
Where are all of my meal preppers at?
Making these SunButter Date Bliss Balls on Sundays is the absolute best.
They’re ridiculously easy to prepare and also get you pretty excited about the coming week.
I love that these set up perfectly without any bake or chill time.
All you do is blend, scoop, roll, and rejoice.
All the better to eat you with, my dear.
What You Need to Make SunButter Date Bliss Balls
The ingredients are very basic.
I’m guessing you probably already have a lot of these in your cabinets like I did– let’s see!
Here’s what you need:
- 12-15 pitted dates
- No Sugar Added SunButter
- chia seeds
- gluten-free old-fashioned rolled oats
That’s it!
How to Use Dried Up Dates
For this recipe, I recommend using a high speed blender or food processor for the best results.
Start the recipe by adding your dates to a high speed blender or food processor.
If your dates are ancient or possibly deceased, don’t worry!
Revive them by soaking them in boiled water for 10 minutes for an instant makeover– the kind I wish I could do on busy mornings.
*sigh*.
How to Make SunButter Date Bliss Balls
Next, add in the oats, SunButter, and chia seeds and pulse until the contents are well combined and sticky.
You want the contents to stick together when pressed between two fingers.
This is how you know the mixture is ready for rolling!
If the dough is too sticky, add a bit more oats, and if it’s too dry, add another date or a spoonful of SunButter and process again.
Scoop the dough out with a cookie scoop and roll in smooth balls.
The mixture should make anywhere from 9-12 bliss balls, depending on the size of your cookie scoop and how generous your scoop is.
Enjoy the balls right after rolling or roll them in some oats for aesthetics and texture!

Description
4-ingredient no bake energy balls made with sunflower seed butter and dates! Naturally sweetened and perfect for meal prep snacking!
Ingredients
- 12–15 dates (~1 cup), pitted*
- 3–4 TBSP No Sugar Added SunButter
- 1 TBSP chia seeds
- 2/3 cup gluten-free old-fashioned rolled oats
Instructions
- Pulse dates in a high speed blender or food processor until they form a paste like consistency.
- Add oats, chia seeds and sunbutter and pulse until combined. If they aren’t perfectly mixed, that’s OK!
- Scrape dough our of blender and place in a bowl in the refrigerator for about 10 minutes to set (optional, but recommended).
- Roll dough into 1-inch balls using your hands.
- Enjoy immediately or store in the refrigerator for up to one week.
- Freeze for long term storage.

If your dates are dry, soak them in warm water for 10 minutes, then drain before adding them to the recipe

Thanks for the awesome combo! My 7 year old loved these. My 4 year old whom I was really hoping to impress was not… We are going to take that with a grain of salt. In an effort to make these a bit more like her preferred store bought, I added mini chocolate chips and rolled a few in coconut. The texture is smooth. I really liked that they worked the way you said when rolled. Thanks for the inspiration. We may continue to build on it 🙂
