This week I rejoined my gym and it sort of felt like I was being disloyal to my yoga studio when I signed the paperwork to make my membership official.

Getting back in the training zone reminded me of one of my absolute favorite pre/post workout treats– stuffed dates.

What You Need to Make SunButter Stuffed Dates
For this recipe, you really need just two things.
Sunflower seed butter and dates.
I’ve dipped my fair share of dates in a variety of nuts and seed butters, but believe me when I tell you that SunButter is the BEST.
Something about roasted sunflower seeds and dates just works.
Pro tip: Use the absolute freshest gooiest Medjool dates you can find– it’ll make the stuffing that much sweeter.
Toppings for SunButter Stuffed Dates
I thought you should know that the dates I usually eat stuffed with SunButter never look quite this photogenic.
Usually there’s a lot more of a smashed asymmetrical vibe going on, but they taste incredible just the same.
Regardless, I had fun dressing them up here with some of my favorite garnishes.
For optional toppings, I went with crushed freeze-dried raspberries and shaved dark chocolate.
Some other ideas are crushed walnuts, hemp hearts, cinnamon, sea salt, or granola.

Why Eat SunButter
Recently, one of my girlfriends was looking for date recipes to nudge along her pregnancy– I wish I had delivered these for her during that time!
She’s got a beautiful baby girl now but I bet she could still use a date date.

These SunButter Stuffed Dates are ideal for a quick snack, dessert, or pre/post workout fuel.
You can find me spooning a jar of SunButter and a container of fresh dates after a workout when I’m too famished to make food but too hungry to leave the kitchen.
Make a few low-key as a simple snack, or dress them up on a big platter with garnishes to share.
Leftovers can be stored in the fridge for several days, but I think they taste best gooey and fresh.
They’d also be a great stuffing for an after school snack or fun interactive dessert for kids!
To keep them nut-free, it’s easy, just make sure to leave off any nut garnishes.

Ingredients
SunButter Stuffed Dates
- 12-oz. gooey Medjool dates, pitted
- 1/2 cup Organic SunButter + more as needed
For serving
- freeze-dried raspberries
- shaved dark chocolate
- hemp hearts
- crushed walnuts
Instructions
- Arrange the pitted dates on a baking sheet or large plate, pitted side up.
- Fill the center of each date with ~1/2 TBSP SunButter.
- Enjoy the dates as is or top with desired garnishes. I chose freeze-dried raspberries and shaved dark chocolate.
- Store leftover stuffed dates in an airtight container in the refrigerator for up to one week.
