I usually have a hard and fast rule of taking things one holiday at a time.
Which means I’m still hard at work on my Thanksgiving menu, thank you very much.
But many of my friends have told me they’ve already got their Christmas trees out and ready to rock around.
Which I support 100% , especially this year.
With much of the world spending more time at home than ever before, why not making it as cozy and Christmas-y for as long as possible?
Even though I haven’t started decorating or gift-giving yet, I did get my annual snowman Christmas cards in the mail.
If you’ve been following me a while you might know that Christmas cards are my thing.
I tried to explain my tradition to M, recently, who laughed and shook his head.
Yes, I’ve been writing snowman Christmas cards since I was 16 and yes I will continue to do so forever and ever.
Because there’s something about the joy of gifting and receiving snail mail that nothing else can come close to trumping.
Except, maybe, baking Christmas cookies.
I have a really simple, healthy, and deliciously festive cookie to share with you today that’s totally grain-free, refined-sugar-free, and oil-free.
You can make these SunButter Sugar Cookies with just 3-ingredients for a festive holiday treat!
Ah, sugar cookies.
A seasonal favorite.
But not my personal favorite, if I’m being honest.
To me, they’re kind of like back-to-back movie marathons or going bar hopping; things that are always better in theory than in actuality.
I don’t know, I guess I’ve always just been more of a sucker for chocolate and that whole sugar cookie things seemed a bit vanilla to me.
But guys, that was before I made them with SunButter.
How to Make Flourless Sugar Cookies
These SunButter Sugar Cookies are lovingly adapted from my Vegan Peanut Butter “Kiss” Cookies.
A classic cookie from the blog!
No matter how many times I make them I’m consistently surprised to find that they “work” despite being vegan, gluten-free, and grain-free.
And by “work” I mean achieve a crispy buttery consistency and a delicious nutty flavor.
If you’ve tried them you know exactly what I’m talking about.
If not, go make them– after you make this version!
Having not settled on a vegan sugar cookie recipe that I liked, I decided to get a little creative and make one I did– with SunButter.
You’re going to love this easy version of sugar cookies made with sunflower seed butter and rolled in colorful crushed sprinkles!
What You Need to Make SunButter Sugar Cookies
Here’s what you need to make SunButter Sugar Cookies:
- flax “egg”
- Organic SunButter
- unrefined coconut sugar
- red and green sprinkles (optional)
That’s it!
After looking at the ingredients you might be thinking, but Lauren, these are basically just SunButter cookies.
Well, maybe, yes.
But who said sugar cookies have to taste a certain way, anyway?
These cookies are nutty, perfectly sweet, and damn festive, if I do say so myself.
How to Make SunButter Sugar Cookies
So let’s get started.
The first step is to set up your space.
Preheat the oven and line a baking pan with parchment paper.
Mix up your flax “egg” in a large mixing bowl and set aside to gel for 5 minutes.
Add in the SunButter and coconut sugar and mix until well combined.
The dough should be firm, sticky, and rollable.
Speaking of rollable, let’s roll them into balls.
Use a cookie dough scoop to create ~1 Tablespoon balls.
When it comes to your sprinkles– you’ve got options!
Drop your balls into the sprinkles and roll them to create an all over red and green effect before flattening.
Or, drop the dough directly on the cookie sheet, flatten in a crisscross pattern with a fork, and then add a sprinkle of red and green on top.
You can even mix the red and green for more visual appeal!
The dough here will spread more than you think it will as the SunButter heats up in the oven.
Because of this, I recommend spacing the cookies out at least 1-2″ on the cookie sheet to prevent overlapping.
Also, don’t flatten the cookies out too much with your fork as they’ll spread into a larger shape naturally.
Bake the SunButter Sugar Cookies for 10-12 minutes, or until they’re golden brown on the edges and underneath.
Tips & Tricks
DO NOT OVER BAKE THESE COOKIES!
Because of the brown color of the dough, it isn’t always easy to tell when the cookies are done.
When in doubt, I recommend removing the cookies early as opposed to over-baking.
The cookies will appear underdone when first removed from the oven but will firm up as they cool.
Allow cookies to cool and harden before serving.
You can store any leftover cookies in an airtight container for 3-5 days or freeze them for long-term storage!
Because of this, they’re great to make in advance for holiday parties or cooke exchanges.

They’re a wonderful option for anyone and everyone this holiday season.

I used red and green sprinkles on mine but you can roll these cookies in any shape and color sprinkle you’d like.
You can dress them up for almost any occasion.
Try rolling them in pink and blue for baby showers, green for Saint Patrick’s Day, and pastels for Easter.
You can also just enjoy them solo for a solid sweet SunButter Cookie that’s good for you!

SunButter Sugar Cookies

Description
3-ingredient “sugar” cookies made gluten and grain-free with SunButter! Finish them with red and green sprinkles for a festive treat.
Ingredients
- 1 flax egg (1 TBSP ground flaxseed + 3 TBSP filtered water)
- 1 cup Organic SunButter
- 1 cup unrefined coconut sugar
- Red and green sprinkles (optional)
Instructions
- Preheat the oven to 350°F and line a baking pan with parchment paper.
- Mix up your flax egg in a large mixing bowl and set aside to gel for five minutes.
- Add in the SunButter and coconut sugar and mix until well combined.
- Using a cookie dough scoop, form 1 Tablespoon balls. Drop the balls into red and green sprinkles, then flatten with a fork using a crisscross pattern, OR drop the balls directly onto the cookie sheet and use a fork to flatten. Top with red and green sprinkles, if desired.
- Place the cookies 1-2″ apart to prevent overlapping while baking.
- Bake the cookies for 10-12 minutes, or until golden brown underneath. Cookies will appear underdone when first removed from the oven. This is normal! Cookies will continue to harden as they cool.
- Store leftover cookies in an airtight container for 3-5 days or freeze for long-term storage.
