It seems like people are busy lately, you know?

It’s back to school season, and everyone is getting in the groove of new adventures, new goals, and new intentions.

Luckily, I whipped up the perfect energizing treat to keep us on our toes.

These Superfood Chocolate Maca Cups are oil-free, gluten free, refined sugar free and require only two ingredients to make, plus additional superfood toppings!

I snuck in the popular adaptogen, maca, that supports natural energy and vitality so you can get your energizer bunny on all week long.

A clean, healthy treat that is easy to make, and also reduces stress and fatigue?

I’ll take a dozen.

Have you tried maca yet?

The Peruvian root that has many health benefits including vitamins and minerals, increased mental and physical energy, and mood and hormone balance.

The root comes in powder form (I use this kind) and you can add it to baked goods, oatmeal, and shakes.

Maca root has kind of a caramel-y butterscotch-y flavor that tastes great paired with chocolate or dessert flavors.

You’re going to love the earthy buttery flavory it adds to these Superfood Chocolate Maca Cups!

Superfoods Chocolate Maca Cups

I was super cautious jumping on the maca train because I’m sensitive to anything that increases energy levels.

As I tend to be an anxious person, my one cup of coffee a day is about all I need to be up and at em, thinking all the thoughts and doing all the things.

I’ve actually tried to stop coffee time and time again, but that’s a story for another post.

But sometimes I do need a little help getting through the day, so it’s nice to have Superfood Chocolate Maca Cups by your side when that happens.

The small amount of maca in my recipe adds a little pop of this adaptogen’s energizing benefits without any of the jitters.

Superfood Chocolate Maca Cups

If you’re thinking about trying maca for the first time, this is the perfect recipe for you!

I kept the maca measurements in this recipe low, but if you’re new to the plant you can reduce to 1/2 TBSP or 1 tsp for an even subtler introduction.

Sprinkle a little in and see what you think!

If you’re not into maca or don’t have it on hand, don’t worry, you can leave it out of this recipe and the chocolate cups will still taste great as is!

Superfood Chocolate Maca Cups

Once your Superfood Chocolate Maca Cups cool and harden, they’re actually really sturdy and easy to store and transport.

I like to keep mine in the freezer for long term storage, but they’ll also last for weeks in the fridge.

Grab a cup on the way out the door for an energizing and healthy mid-day treat to look forward to when the going gets tough.

The cups won’t melt at room temperature, but if you travel with them I usually take an icepack, depending on temperature where you are.

That means no hot yoga classes, mmk?

These Superfood Chocolate Maca Cups are perfect to grab for a long day at the office or a quick afternoon treat.

Pack the top of your cups with nuts, seeds, and dried berries for tons of texture and crunch or keep it simple and go without toppings at all!

I used raisins, dried cranberries, pepitas, raw almonds, and hemp hearts as superfoods toppings, but some other fun topping ideas are walnuts, shredded coconut, cacao nibs, or any of your favorite dried fruits, nuts, and seeds.

Enjoy these tasty cups as an energizing treat whenever you want.

Description

Energize with chocolate cups made with adaptogenic maca and antioxidant rich cacao. Top with your favorite superfoods and enjoy as a snack or dessert.


Ingredients

  • 1 10 oz. dairy-free dark chocolate or dark chocolate bar, chopped
  • 1 TBSP maca powder
  • ~1/2 cup mix -ins: raisins, dried cranberries, pepitas, almonds, hemp hearts

Instructions

  1. Prepare a muffin tin with muffin liners and set aside.
  2. Melt the the chocolate chips or chocolate bar on the stovetop over low heat or by microwaving in 30 seconds intervals.
  3. Whisk in the maca powder into the melted chocolate until smooth.
  4. Pour ~1 TBSP chocolate maca mixture into muffin liners and swirl with a toothpick to ensure the chocolate coats all sides.
  5. Press desired toppings into the chocolate top.
  6. Place the muffin tin in the fridge or freezer to set up for 30 mins – 1 hour. Serve.
  7. Store leftovers Superfoods Chocolate Maca Cups in the freezer or fridge for long term storage.
