This past weekend M and I saw our first hummingbird on the deck.
We’ve been noticing a lot of bird traffic on the deck lately, which we fondly refer to as “fake hummers”.
You know, the aerial movement, flutter of wings, and flash of color that catches your eye but ends up being a sparrow, crow, or pigeon.
We’d taken to sitting on the couch, sipping wine and talking about upcoming travel plans while sporadically glancing at the deck.
We’re on hummingbird watch.
It was during one of these sessions that I saw something.
I clutched M’s arm slowly but firmly so as not to scare her, while I whispered excitedly, “Hummer, hummer, there’s a hummer!”
And there she was.
The lady hummingbird that perched on our new feeder to suck up nectar was so much smaller than I remember from last year!
With those fast wings and small green body, they’re visually striking and yet easy to miss.
After our first sighting, M immediately cleaned the feeders and changed the sugar water supply, because our hummingbirds deserve the freshest.
And so do you, friends.
Which is why I’m sharing this Superfood Pitaya Bowl with you today.
It’s made in a blender with frozen dragonfruit, berries, banana, and Navitas Organics Superfood + Sea Veggie Blend for an energizing breakfast!
What You Need to Make Superfood Pitaya Bowl
This smoothie bowl is like eating ice cream for nourishing breakfast and I think you’ll approve.
Here’s what you need to make it:
- unsweetened almond milk
- vegan vanilla protein powder
- Navitas Organics Superfood + Sea Veggie Blend
- frozen dragon fruit
- frozen strawberries
- frozen banana
That’s it!
How to Make Superfood Pitaya Bowl
This pitaya bowl is super easy to make in less than 5 minutes with a blender.
I used a Vitamix blender bucket with a toggle, but another high speed blender or food processor will work, too.
The order in which you add things to the blender matters!
I recommend adding the ingredients in the order I listed so the protein powder and Superfood + Sea Veggie Blend powder doesn’t fly everywhere.
Add the almond milk, protein powder, Superfood + Sea Veggie Blend, frozen dragon fruit, frozen strawberries, frozen banana, and almond milk to a high speed blender.
Slowly increase the speed and blend until everything is super creamy and smooth.
You want the pitaya mixture to be smooth without any chunks for fruit or an icy-texture.
Be sure to scrape down the sides as needed to recombine everything and add a splash of almond milk as needed to get the blades moving.
Navitas Organics Superfoods
I used Navitas Organics Superfood + Sea Veggie Blend to pack this pitaya bowl with even more nutrition!
This powder is a mix of organic rockweed, sugar kelp and skinny kelp powders.
This oceanic superfood is a dense source of minerals and micronutrients.
I love adding a tsp to my smoothie and smoothie bowls for a boost of nutrition with a pleasant flavor profile!
Swaps and Substitutions
This recipe is customizable to match whatever ingredients you have available to you!
You can sub any unsweetened plant-based milk for the almond milk.
The frozen strawberries can be substituted with another berry, but note that this swap will cause the end color to be different depending on what berries you choose.
I recommend using a medium-sized frozen banana for this smoothie bowl, but you can also use half of a large banana or 1.5 small bananas to achieve the correct consistency.
While I liked the flavor of vanilla protein powder in this smoothie bowl, you can use whatever protein powder you like or omit it altogether.
I highly recommend adding Navitas Organics Superfood + Sea Veggie Blend for a boost of nutrition!
Toppings for Superfood Pitaya Bowl
This Pitaya bowl, along with most smoothie bowls, is ALL about the toppings!
These toppings are optional, but here are some idea that I love:
- Shredded coconut
- Fresh berries
- Granola
- Nut butter
- Navitas Organics Unsweetened Cacao Nibs
- Navitas Organics Mulberries
- Navitas Organics Hemp Seeds
Add anything else that sounds good to you; anything goes!
Any combination of nuts, dried fruit, or seeds would be lovely on top for some texture and crunch.
How to Serve Superfood Pitaya Bowl
Serve the mixture in a bowl and decorate it with your favorite toppings.
Because this smoothie bowl is mostly fruit, I love adding a big spoon of nut butter to offset the sweetness with some healthy fats.
Some other favorites are fresh berries, granola, cacao nibs, and unsweetened shredded coconut.
This recipe only serves one and doesn’t keep well, so enjoy it immediately!
You can double the recipe for multiple servings or just make another serving afterwards to enjoy with a friend.
The vibrant color and flavor of this recipe makes it a wonderful warm weather breakfast.
I love enjoying it post-workout with all of the crunchy toppings I can fit on top.
