Once upon a time I stuffed an avocado with nut butter and Instagram went wild for it.
Do you remember?
It was a few years back when healthy fats were just becoming all the rage.
I shared them tentatively to my feed, unsure whether you guys would be obsessed or apprehensive.
The response was mostly in awe of this sultry savory combo.
So, what’s better than creamy peanut butter and avocado?
SunButter and avocado, that’s what, for a delicious nut-free variation that’s school-safe and allergen-friendly.
These Superseed SunButter Stuffed Avocados are the perfect compact snack packed with healthy fats, a little crunch, and a touch of sweetness.
The inspiration for these Superseed SunButter Stuffed Avocados came from my love of nut butter and sunflower seed butter on toasted bread.
The combination sounds funny, but it’s so cozy, creamy, and satisfying.
So, what if we removed the bread from the equation and added some extra seeds?
Here’s what you need:
- avocados, split in half and pits removed
- Organic SunButter
- sunflower seeds
- chia seeds
- hemp hearts
- date paste
That’s it!
The recipe starts with avocados.
Simple enough, yeah?
But here’s a tip you might not have thought of before.
Make sure you rinse the outside of the avocado well before slicing into it.
“But why, Lauren, I’m not eating the skin?”
Sure, you’re not eating the skin, but when slicing into the fruit you can easily transfer bacteria from the outside into the flesh.
And no one wants all that junk contaminating your creamy avocado.
So rinse, slice, and pit your avos.
After you have your avocado halves sliced and pitted, drizzle in about ~1/2-1 TBSP of sunflower seed butter into each hole.
You don’t really need to worry about the measurements here, though.
Just drizzle enough SunButter in the hole to fill to the top.
I used my favorite Organic SunButter in this recipe that’s creamy and drizzly with only one ingredient– roasted sunflower seeds!
Each serving contains 7g of plant-based protein and more vitamins and minerals than most nut butters, making it the ideal filling for any avocado boat.
Now that your avocados have a sexy SunButter filling, we garnish them with a seedy trifecta.
To give these avocado boats even more protein and nourishment, I added tree seeds to the mix.
Sprinkle on about ~1 tsp each of sunflower seeds, chia seeds, and hemp hearts.
The seeds give you some texture to offset the creaminess of the avocado and SunButter.
Again, don’t worry about the measurements here, just sprinkle as many seeds as you would like.
If you’d like some seedy extra credit, try some different seeds like flaxseed, pepitas, and sesame seeds for even more texture and crunch.
Now that we have your avocados super-seeded, let’s add a touch of sweetness.
If you’re watching your sugar intake, you can skip this step altogether.
However, I think a hint of syrup really compliments the nutty flavors of the seeds and Sun Butter!
I drizzled ~1 tsp of date paste over each stuffed avocado for a refined sugar-free flourish.
If you don’t have date paste, try using maple syrup, honey (if not vegan), or agave to sweeten your avocado instead.
Now they’re ready to serve, so grab a spoon and dig in!

They’re a fun after school snack for kids and the perfect satisfying snack for adults to get you through to your next meal.
I made a bunch of stuffed avocados for these photos, but they’re best made to order.
Avocado flesh will turn brown as it starts to oxidize, so this snack is best enjoyed immediately!
If you have leftover unstuffed avocado halves, try storing them in the fridge brushed with lemon juice to prevent them from turning brown.
