I made nut milk a few weeks ago and I pretty much felt like a wizard when I saw the brazil and cashews blend into a frothy creamy white in my Vitamix.
Magic.
Then I whipped up these Tropical Nut Pulp Bites afterwards from the leftover nut “pulp” and that’s when I knew I needed to make nut milk on a weekly basis.
Just to collect the nut pulp for more bites like these.
Shhh.
I still drink the milk.
Swaps and Substitutions
These Tropical Nut Pulp Bites are the perfect way to use all of that creamy pulp that collects in your nut milk bag after straining!
I had cashew nut pulp leftover, but you can use any variety of nut pulp to make these.
The soft nut pulp makes these bites super moist and creamy.
I can guarantee that you’ve never had an energy bite this “fudge-y”, friends!
They’re naturally sweetened with a blend of dried tropical fruit, packed with nutty protein, then rolled in coconut shreds.
Basically the beach in a bite.
How to Serve Tropical Nut Pulp Bites
Enjoy your Tropical Nut Pulp Bites as a nutritious anytime snack.
I like to keep mine in the freezer for storage and snack on them as needed.
I usually grab mine as pre/post workout fuel, but they’re perfect any time of day.
They’re portable and pack well, but the bites will soften at room temp, so treat them with care until devoured!
(PS- I definitely smushed a couple of mine at the bottom of my purse, but they still tasted amazing.)

Tropical Nut Pulp Bites
- Total Time: 30 mins
- Yield: 12-16 balls

Description
5-ingredient tropical nut pulp bites naturally sweet with exotic dried fruit. Use your leftover nut pulp in this easy recipe!
Ingredients
- 1 cup raw cashews or mixed nuts
- 1 – 1 1/2 cups nut pulp
- 2 TBSP nut butter (I used cashew butter)
- 1/2 cup cup blend of dried mango, dried papaya, and dried pineapple, finely chopped
- shredded coconut
Instructions
- Combine all ingredients except for shredded coconut in a high speed blender or food processor and pulse until well combined.
- Roll into balls with your hands and then roll in shredded coconut (optional).
- Freeze for 15-20 minutes to set up, then serve!
- Store in the refrigerator for up to a week and freeze for long term storage.
