Vegan Bratwurst with Sauerkraut

Description

Vegan Bratwurst with Sauerkraut made with oats, legumes, and spices pan-fried and served with Eden Foods Organic Sauerkraut and fried apples.


Ingredients

Vegan Bratwurst

Sauerkraut

  • 1 jar Eden Foods Organic Sauerkraut
  • 1 large apple, cored and sliced
  • 1 small yellow onion, sliced 

For servings

  • Minced herbs 

Instructions

  1. In a small bowl, mix the ground flaxseed and water to create your flax egg. Set aside for 5 minutes to allow the mixture to gel. 
  2. Add the oats and walnuts to a high speed blender or food processor and pulse until you have a fine meal. Add in the flax egg, white beans, white onion, garlic powder, tomato paste, smoked paprika, Italian seasoning, sea salt, and cumin. Process until it’s well combined and thick. If the mixture is too sticky, add a bit more oats. Transfer the mixture to a bowl and move it to the refrigerator to chill for ~30 minutes. This will make the bratwurst easier to form later.
  3. Once the mixture is chilled, use a ⅓ cup measuring cup to form 6-7 oblong sausage shapes with your hands. Place the bratwurst on a large plate lined with parchment paper.
  4. Add the olive oil to a large skillet over medium heat. Once it’s warm, carefully transfer the bratwurst to the pan and fry them for ~10 minutes, alternating position frequently so all sides get browned. The bratwurst will be delicate, so be gentle with them when flipping and moving!
  5. Remove the bratwurst from the pan and set them aside. Add another drizzle of olive oil to the pan if it’s dry and place back over medium high heat. Once it’s warm, add in the sliced onion and apple and sauté for ~10 minutes, or until the onion is fragrant and the apple is soft and tender. Drain the entire jar of sauerkraut and add it to the pan. Mix everything well and heat for several minutes until the kraut is warm and well combined with the apples and onions. Add the vegan bratwurst to the pan and cook an additional 1-2 minutes to reheat the bratwurst. 
  6. To serve, add the sauerkraut and vegan bratwurst on a plate and top with optional fresh herbs.
  7. Store leftover bratwurst and sauerkraut in the refrigerator and reheat in the microwave before serving.
