This time of year is weird, isn’t it?

People are everywhere and nowhere at the same time, with tons of events to attend but hardly any traffic on the streets.
The Christmas tree is still up, looking a little weary and wiry, a telling metaphor for how I feel post holiday-hustle.
I want to push myself to get things in order for the new year, but I also want to lay in bed all day and do absolutely nothing.

How to Make Vegan Dark Hot Chocolate
My sister and I used to drink packets of Land of Lakes hot chocolate mix on snow days off from school.
I always liked mine with a stout milk to chocolate mix ratio, making a decadent drink which I proceeded to pile with enough marshmallows to completely cover the surface area of the mug face.
GOOD TIMES.
But did you know hot chocolate can be surprisingly easy to make yourself, vegan, refined-sugar-free, and healthy-ish?
Well, you’re going to love this hot chocolate!
It’s the kind of cozy warm drink you can pour up for non-vegans and vegans and they’ll be amazed how dreamy it is without dairy.
It’s decadent, rich, creamy, oh so chocolatey, and made with good for you ingredients that you’ve probably got in your kitchen cabinets.
What You Need to Make Vegan Dark Hot Chocolate
So if you’re going to drink chocolate, why not add in your favorite chocolate bar?
This cocoa is naturally sweetened with a refined sugar free dark chocolate bar!
The addition of chopped chocolate (70% cacao or higher!) is a game-changer as far as hot chocolate goes, friends.
In melting, it adds sweetness and weight to the almond milk, making the finished product luxurious and smooth.
Here’s what you need:
- almond milk
- raw cacao powder
- dark chocolate
- coconut sugar
- cinnamon
That’s it!
How to Serve Vegan Dark Hot Chocolate
Make this Vegan Dark Hot Chocolate on a cold day, snow day, or any day you need a steaming mug of chocolate to make the world right again.
I like mine on the darker side, so I use little to no coconut sugar in addition to the chocolate bar.
Try spooning some off the stovetop (careful, don’t burn yourself!) and adjust the sweetness as needed.
To make multiple mugs, try doubling, tripling, or even quadrupling the recipe for more sippers.
I topped my mugs with shaved chocolate and shredded coconut.
Some other ideas are vegan whipped cream, date caramel, or cinnamon sticks.
Oh, and I love this recipe with a pinch of cinnamon for a bright spicy twist!

Description

Ingredients
- 1 cup unsweetened almond milk
- 1 TBSP unsweetened raw cacao powder
- 3 –4 TBSP dairy-free dark chocolate bar (70% or higher), chopped
- 1 –2 tsp coconut sugar
- pinch of cinnamon
For topping
- shaved chocolate
- shredded coconut
Instructions
- Add the almond milk to a saucepan over medium heat.
- Once the milk is warm and steaming, add in the cacao powder, chopped chocolate, and cinnamon and whisk until there aren’t any lumps.
- Taste and add optional coconut sugar to reach desired sweetness. I usually don’t use any at all!
- Pour the hot cocoa into mugs and top with optional shaved chocolate. Serve immediately!
