On photoshoot days I immediately wake up and check my weather app to see if the light will be good for shooting.
I’m still shocked on mornings when I see the temperature will be soaring into the 80’s.
And even more shocked that this Sunday is the last day in May– excuse me?
Anyway, it looks like we’re well on our way to summer, so let’s bring in the summer staples.
One of my favorite summer staples growing up was baked beans.
The Bush’s Vegetarian Baked Beans were my absolute favorite as a kid.
We often opened a can to serve alongside chips, burgers, and coleslaw on messy paper plates on the deck overlooking the backyard.
I used to spoon them onto my plate and watch the mixture expand in a think syrupy puddle.
Sometimes I actually used to delight in dipping my potato chips in the puddle (don’t judge me!).
When I asked on Instagram what summer recipes you needed, baked beans was a top request!
These Vegan Maple Baked Beans don’t disappoint.
They’re sweet, a little tangy, and tomato-y.
They’re easy enough to whip up in 15 minutes for a sweet summer side without any refined sugars or thickening agents!
Here’s what you need for the best vegan baked beans:
- avocado oil
- sweet onion
- Eden Foods Organic Navy Beans
- pure maple syrup
- yellow mustard
- apple cider vinegar
- tomato paste
- Himalayan sea salt
- fresh herbs
That’s it!
You’re going to love the addition of maple syrup in this recipe in place of corn syrup or refined sugar in the original.
It melts into the recipe easily and raises the viscosity, making its addition irreplaceable!
This recipe starts with Eden Foods Organic Navy Beans!
Well, technically, it begins with sautéed onion, but after that we add in our navy beans.
Navy beans are small white beans with a mild flavor and creamy texture.
They’re the perfect legume base to this baked bean recipe to soak up all of the rich tomato and maple flavors!
Eden Foods Organic Navy Beans are small, white, and have a mild flavor. are soaked overnight and thoroughly cooked with zero additives.
They also don’t have any salt added, so you can season the recipe accordingly without worried about any sodium in the beans themselves.
I love using in Eden Foods Organic Navy Beans in my recipes because they have BPA, BPS, and phthalate free can linings.
You need three cans for this recipe.
After they’re drained and rinsed, these beans are ready to go into the saucepan.
Next, quickly stir in the tomato paste, yellow mustard, apple cider vinegar, filtered water, and Himalayan sea salt.
Stir well to ensure that all of the navy beans are coated with sweet tomato sauce.
When I first tested this recipe I left out the filtered water and the result wasn’t nearly as creamy.
If the beans look slightly watery at first, that’s OK!
The liquid will cook off as you continue to heat the mixture.
Reduce the heat to a simmer and cook the beans for a good 15 minutes to allow the flavors to incorporate.
At this point, I recommend taste testing the beans and adding more mustard, maple syrup, or sea salt to enhance flavoring.
Enjoy these Vegan Maple Baked Beans as an easy summer-inspired side.

Vegan Maple Baked Beans

Description
Easy vegan baked beans made with navy beans and simple seasonings naturally sweetened with pure maple syrup. The perfect easy plant-based summer side!
Ingredients
- 1–2 tsp avocado oil
- 1 large sweet onion, diced
- 3 15-oz. cans Eden Foods Organic Navy Beans (~4.5 cups cooked navy beans), drained and rinsed
- 1/4 – 1/3 cup pure maple syrup
- 2 TBSP yellow mustard
- 2 TBSP apple cider vinegar
- 1/2 cup tomato paste
- 1/2 tsp Himalayan sea salt
- 1/4– 1/2 cup filtered water
- fresh herbs (optional), for serving
Instructions
- Heat a large pot over medium heat. Once hot, add the avocado oil, and diced onion. Sauté for 3-5 minutes, stirring frequently, or until onion is soft and translucent.
- Next, add the drained and rinsed beans along with the mustard, tomato paste, maple syrup, filtered water, and sea salt. Stir to coat and cook on low for 10-15 more minutes to let the flavors meld.
- Taste and adjust seasonings as needed, adding a little extra mustard, tomato paste, coconut sugar, or salt to reach your desired flavoring.
- Enjoy immediately with fresh herbs! Store leftover baked beans in the fridge for up to one week.
