Remember how we counted sleeps before Christmas?
Well today is my last sleep before the big move.
Tomorrow I have friends and family come and help me muscle stuff from Virginia to Maryland.
I’m slowly accepting the chaos that is life in flux right now.
I finally realized that letting all of the uncertainties and unknowns remain uncertain and unknown is a lot easier than desperately trying to control them.
You’ve heard of the hot girl summer, right?
Well, here I am, proud of my hot *mess* summer.
My time and creativity in the kitchen has been limited, too.
I’m mostly working my way through the fridge and freezer; using up random jars of sauerkraut and frozen peas in a desperate attempt to lighten up the U-haul situation.
But that’s okay because the recipe I have to share with you today requires minimal ingredients and prep!
This Vegan S’mores Dip is so easy to bake and enjoy for whatever season you’re in this summer.
It’s made vegan, gluten-free, and refined-sugar-free with just three ingredients and your choice of dippers!
I think you’re going to love the deconstructed s’mores feel.
If you’re like me, my number one complaint with regular s’mores is that the chocolate doesn’t quite get melty enough.
And the marshmallows might not quite get roasty-toasty enough.
It’s all kind of a toss-up, really.
The beauty of this recipe is that the chocolate is perfectly gooey from the get-go and you can easily control the “done-ness” of the marshmallows on a scale of brown to burned.
(No judgement if you’re one of those people that loves them blackened!)
Here’s what you need:
- avocado oil
- Endangered Species Bold & Silky Dark Chocolate, chopped
- vegan marshmallows
That’s it!
Start this recipe with a cast iron skillet.
I found cast iron skillet to work well in the oven and also doubles for a cool presentation for the s’mores.
However, if you don’t own a cast iron skillet, you can also use a circular baking dish or even a pie pie instead.
Lightly grease the bottom of the pan with oil just to ensure the chocolate doesn’t stick.
Next, let’s chop the chocolate!
I used Endangered Species Bold & Silky Dark Chocolate to create this recipe.
Dark chocolate is one of the few things I *haven’t* packaged up yet for the move.
My chocolate drawer remains untouched, where I stash my ES chocolate.
This chocolate is incredible because it’s vegan and low in sugar.
I also love supporting ES Chocolate’s mission to give back to endangered species and the planet.
The bold dark chocolate bar is mildly sweet and rich in cacao.
It melts beautifully at the bottom of the pan to create the rich chocolate-y base for this dip!
Next, let’s layer on the vegan marshmallows.
I recommend using large vegan marshmallows for this recipe for aesthetics and ease in dipping.
Be sure to leave a little space between the marshmallows to allow room for them to grow and expand during baking!
The bake time will be dependent on your pan, your oven, the brand of marshmallows, and your preferred done-ness of the marshmallows.
I recommend keeping an eye on the skillet after the 8 minute mark and removing from the oven once the marshmallows look delectable.
The marshmallows will deflate a bit (womp womp womp) after removing from the oven— this is totally normal and OK.
It won’t affect the flavor!
Now let’s grab some dippers!
Use vegan and gluten-free graham crackers for an authentic s’mores feel.
I love adding in fresh summer berries for a bit of a twist.
You could also dip apple chips, cookies, or any kind of sweet crackers or chip.
And, you don’t have to use this s’mores dip as a dip.
I know, mind blown, but hear me out.
I think it would be fantastic spooned over pancakes, oatmeal, yogurt bowls, or ice cream.

You could also throw all of the ingredients in your camping bag and assemble this over the campfire!
The dip is best enjoyed straight from the oven, hot and fresh.
Keep in mind that leftover chocolate will start to harden in the pan if left out.
You can’t transfer leftovers to a microwave safe dish and reheat them in the microwave until they’re gooey and warm again.

Description
Vegan baked s’mores dip made with dark chocolate and vegan marshmallows. Serve with graham crackers and fresh fruit as a summer dessert or appetizer!
Ingredients
- 1 tsp coconut oil
- 2 cups Endangered Species Bold & Silky Dark Chocolate bars, chopped
- 8–10 oz. vegan marshmallows (enough to cover the base of your pan)
- vegan graham crackers, for serving
- fresh berries, for serving
Instructions
- Preheat the oven to 425°F and lightly grease the bottom and sides of a cast iron skillet with coconut oil.
- Scatter the chopped chocolate evenly across the bottom of the greased skillet.
- Arrange the marshmallows in an even layer on top of the chocolate, leaving space between the marshmallows to allow room for them to expand.
- Transfer the skillet to the oven and bake for 8-12 minutes, or until the marshmallows are puffy and golden brown, and the chocolate is totally melted. Bake time is dependent on your oven, skillet, and brand of marshmallows, so be sure to keep an eye on the skillet after the 8 minutes mark.
- Serve the vegan s’mores dip warm from the oven with vegan graham crackers and fresh berries.
