TBH I’ve never been the biggest French Toast gal.
I would previously take pancakes or waffles over french toast most days of the week.
But that was before I discovered the *best* vegan and gluten-free sourdough bread that I’m now using in all of my recipes.
Finding this bread has sent me down a wonderful recipe rabbit hole of toasts, sandwiches, and “bread-y” remakes.
After years of vehemently avoiding bread and in the process kind of starting to believe that I didn’t LIKE bread, I’m very grateful to be proven wrong.
Bread is delicious and vegan and gluten-free bread is even better.
And let me tell you, friends, Vegan Sourdough French Toast just hits differently.
This Vegan French Toast is made with gluten-free sourdough bread topped with fresh berries, maple syrup, and a generous drizzle of SunButter.
This is the kind of recipe to make and share for a decadent plant-based weekend breakfast or brunch.

What You Need to Make Vegan Sourdough French Toast
Another reason that I always avoided french toast is that I believed it to be a *hard* recipe.
You know, the kind of recipe that takes a lot of brain space and doesn’t yield results that are worthy of the time and energy you cashed out.
But I was so wrong!
This recipe comes together almost as quickly as making a bowl of stovetop oats + coffee.
Here’s what you need:
- ground flaxseed
- cornstarch
- unsweetened almond milk
- pure maple syrup
- ground cinnamon
- vegan sourdough bread (depending on the size of your bread)
- vegan butter
That’s it!
How to Make Vegan Sourdough French Toast
The first step to making Vegan French Toast is mixing up the batter.
Add cornstarch and ground flaxseed to a large mixing bowl.
Ground flaxseed and cornstarch together act as thickening agents for the batter.
Slowly add in the almond milk while whisking.
Continue whisking until the cornstarch is completely dissolved into the almond milk without any lumps.
Next, add in the maple syrup and cinnamon.
Whisk everything together until it’s well combined.
Let the mixture sit for a few minutes to thicken and gel up a bit.
Meanwhile, heat a large skillet over medium heat with a bit of vegan butter.
While the skillet heats, add the sourdough bread slices to the batter and allow it to soak on each side for ~10-15 seconds.
The bread should be well coated but not super sad and soggy.
When the skillet is warm and the butter is melted, add the french toast to the pan and swirl to coat them well with the butter.
Cook the Vegan Sourdough French Toast for 5 minutes on each side, or until both sides are golden brown and crispy.
This might take longer on the first side than the second side.
I usually end up doing about ~6 minutes for the first side and ~4 minutes for the second side, depending on how crispy you’d like your french toast.
Swaps and Substitutions
If you don’t have vegan butter and prefer to use oil, I recommend using coconut oil or a neutral cooking oil like avocado oil.
This recipe will also work with any bread, not *just* sourdough bread, however, I think sourdough bread gives the french toast a special kick!
If you don’t have almond milk, you can substitute any plant-based milk in its place.
I haven’t tested different measurements or substitutions for the cornstarch and ground flaxseed, however, another starch like arrowroot powder might be an option.
For toppings, go with whatever sounds good!
What You Need to Serve Vegan Sourdough French Toast
Here’s what I love to top my Vegan Sourdough French Toast with:
- No Sugar Added SunButter
- Berries
- Maple syrup
That’s it!
I love using No Sugar Added SunButter because it has a hint of sea salt that draws out the sweetness of this french toast.
It’s also delicious paired with fresh berries and maple syrup.
I like to take a spoon, grab a generous portion, and drizzle it all over the waffles so every bite has a bit of SunButter!
How to Serve Vegan Sourdough French Toast
Serve the french toast immediately with optional toppings, like No Sugar Added SunButter, berries, and maple syrup.
This recipe is definitely best when fresh off of the cooktop, but leftovers can be stored in an airtight container in the refrigerator for 1-2 days.
To reheat them, add them to a skillet and warm them for several minutes on both sides, then serve with your favorite toppings.
This Vegan Sourdough French Toast is a great way to use up an excess of bread, or bread that’s getting a bit old and stale.
It’s also a delicious breakfast or brunch recipe to make for the whole family!
Depending on how big your bread is, this recipe makes anywhere from 6-8 pieces of french toast, so it’s definitely shareable.
To make even more, double the batter and bread for a bigger serving size.
This recipe is also a fun one to make to celebrate mother’s day, Easter, birthdays, or just a regular old weekday that needs some livening up.

Vegan Sourdough French Toast
