M and I are between TV shows right now and are having trouble committing to something new.
Usually our show-less evenings encourage us to power up our Kindle and read a few chapters.
Sometimes, though, it’s fun to fall down a TikTok rabbit hole together.
That’s right, lately M has been journeying with me through the TikTok algorithm in search of our favorites.
If there’s one thing TikTok is good for, it’s making you feel like you’ve never really been alone in an emotion, thought, or feeling.
Swiping with my thumb, I start to realize that it’s all been done and thought and felt before and then filmed for a skit for the socials.
But we do laugh a lot and that makes for a nice evening despite the scrolling.
Something we recently stumbled upon is the viral magic cookies.
I was instantly intrigued because…it’s a four-ingredient grain-free cookie with lots of chocolate chips.
Do I really need to say anything more?
I felt like it was my duty to share these Vegan Viral Magic Cookies with you immediately!
What You Need
These magic cookies are a spin off of magic bars from childhood.
If you’ve searched through the F&V archives, you might have made my Healthy Magic Cookie Bars.
You shouldn’t, if you haven’t already!
These magic cookies, however, are even easier to make and made with pantry staples that you probably already have on hand.
Here’s what you need to make Vegan Viral Magic Cookies:
- cashews
- coconut flakes
- Endangered Species Oat Milk 55% Dark Chocolate Chips
- sweetened condensed coconut milk
That’s it!
How to Make Them
First, preheat the oven to 350°F and line a baking sheet with parchment paper.
Add all of the ingredients to a mixing bowl and combine until the mixture is a sticky crumble.
The ingredients should be totally coated in the condensed coconut milk without a lot of excess milk remaining in the bowl.
I used a heaping cup of Oat Milk 55% Dark Chocolate Chips in these magic cookies.
These dark chocolate baking chips are perfect for healthier fall baking.
With no excess sugar, these baking chips made with oat milk are packed with cacao and melt magically in these magic cookies!
Swaps and Substitutions
When I first tested these Vegan Viral Magic Cookies, I tried using a mix of coconut cream and maple syrup instead of condensed coconut milk.
Condensed coconut milk was the one ingredient that I didn’t have in my pantry, so I tried to sub it.
However, the results weren’t what I was hoping for.
You need the sticky consistency of the condensed coconut milk to help these cookies stick together.
The ones in my test fell apart and didn’t brown as nicely.
I recommended using coconut flakes instead of shredded coconut for the best consistency and texture in your cookies!
Tips for Shaping These Cookies
Transfer the mixture to the prepared baking sheet and form them into rough circles with your hands or a spatula.
Transfer the baking sheet to the oven and bake them for ~14-15 minutes, or until the top is golden brown but not burnt.
Watch the cookies carefully in the last few minutes of baking to ensure the coconut doesn’t burn.
Remove the cookies from the oven and if the cookies have spread, use a spatula to reform them slightly.
Allow the cookies to cool for 20 minutes before eating them.
This will preserve their shape!
How to Enjoy Them
Once the cookies are cooled and hardened, enjoy them immediately.

- ½ cup cashew flour (cashews pulsed into a flour in the blender)
- 2 cups unsweetened coconut flakes (not shredded coconut!)
- 1 cup Endangered Species Oat Milk 55% Dark Chocolate Chips
- ½ cup sweetened condensed coconut milk
Instructions

Can I use almond flour instead of cashew flour?

No, this won’t lead to the same consistency. Crushed cashews are best!
