Description

Vegan Viral “Salmon” Bowl with marinated tofu, diced cucumber, and kimchi served with nori strips and organic sesame seeds.


Ingredients

Tofu “Salmon” Steaks

Sriracha Mayo

  • ¼ cup vegan mayo
  • 1 TBSP coconut aminos
  • 1 TBSP sriracha

For Serving 


Instructions

  1. Cut the tofu block into quarters to create “steaks”. Score the tofu on the diagonal with a knife using two chopsticks as guards on either side so you don’t slice all of the way through. The slices will ensure that the marinade is absorbed better.
  2. Add the marinade ingredients to a shallow dish and mix well to combine. Add the scored tofu quarters to the marinade and toss them so they’re completely covered. Allow the tofu to marinade for ~30 minutes to 4 hours. 
  3. While the tofu is marinading, prepare your toppings and cook the rice according to instructions. 
  4. After marinading, add a generous amount of black sesame oil to a pan over medium high heat. Once the oil is warm, add the tofu steaks to the pan and cook for about 10-15 minutes, flipping at the halfway point. Continue cooking until the tofu steaks are crispy brown on both sides. 
  5. While the tofu is cooking, prepare your sriracha mayo by adding all ingredients to a small bowl and whisking until combined. Set aside.
  6. To assemble, add rice to a bowl or plate and add one of the tofu steaks on top. 
  7. Top the plate with the sliced avocado, cucumber, kimchi, and drizzle with sriracha mayo. Top with black and brown sesame seeds and serve immediately. Enjoy by putting the ingredients on the nori like sushi!
