This past weekend I went hiking at Lamb’s Knoll on the Appalachian Trail with M and a friend.
The way down always feels longer, because you’ve already taken pictures of the view, eaten your PB&J, and rested at the summit.
So, to keep morale up, we joked that at the bottom there would be burgers waiting on us.
We emerged from the wooded trail into a meadow with a picnic shelter area, where we saw people…and food.
While we walked by, sweating and heavy-footed, a nice man stopped us and asked if we were hungry.
“Can I put a burger on the grill for you?” he asked, and we looked at each other in amazement.
And friends…he even had veggie burgers. The burger manifestation is real!
Apparently the local church treats hikers to a meal just twice a year at this exact hiking location.
And we just happened to come on the right day and the right time!
The only thing that could have made it better would be if they had had these Viral Chocolate Blueberry Yogurt Bites at the bottom.

Here’s what you need to make Viral Chocolate Blueberry Yogurt Bites:
- blueberries, rinsed and dried
- unsweetened almond milk yogurt
- vegan dark chocolate
- Bob’s Red Mill Lemon Blueberry Homestyle Granola
That’s it!
How to Make Viral Chocolate Blueberry Yogurt Bites
First, prepare a small sheet pan or plate lined with parchment paper.
You need this to fit in your freezer, so make sure to select a size that works for your freezer size and shape!
Rinse and dry the blueberries well.
You want them to be as dry as possible so they don’t water down the yogurt.
Add them to a bowl with the yogurt and toss them until they’re well-coated.
I recommend using an unsweetened cashew or almond milk yogurt for this recipe.
Using a spoon, scoop the yogurt covered blueberries onto the parchment paper lined baking sheet.
I made about 12-16 clusters, but you can more or less depending on how big or small you want them.
Transfer them to the freezer to freeze for 15-20 minutes.
While the blueberry bites are freezing, melt the chocolate chips on the stovetop in a small saucepan over medium low heat.
Be sure to stir the chocolate chips frequently to prevent them from burning.
I like to use a spoon to cover the yogurt bites in chocolate.
They don’t have to be perfect; a little yogurt peaking through it fine!
Bob’s Red Mill Granola
Immediately sprinkle them with granola and return the pan to the freezer to set for 10-15 minutes.
I used Bob’s Red Mill Lemon Blueberry Homestyle Granola for this recipe.
This ‘nola is a nourishing combination of whole grain oats, real maple syrup, coconut, blueberries and wholesome seeds.
It’s baked to perfection and ready for all of the breakfast scenarios.
I love that it’s certified gluten-free with less than 7 grams of sugar per serving!
The Lemon Blueberry flavor is nice here to echo the blueberry flavor as a crunchy finish.
The clusters are ready when the chocolate is hardened and set.
I prefer to let my clusters sit outside of the freezer for 10-15 minutes before serving for the best taste and consistency.
Store leftovers in the freezer in an airtight container for several weeks.

Ingredients
- 2 cups blueberries, rinsed and dried
- 1 cup unsweetened almond milk yogurt
- 1 cup vegan dark chocolate
- ¼ cup Bob’s Red Mill Lemon Blueberry Homestyle Granola
Instructions
- Prepare a small sheet pan or plate lined with parchment paper.
- Rinse and dry the blueberries well. Add them to a bowl with the yogurt and toss them until they’re well-coated.
- Using a spoon, scoop the yogurt covered blueberries into 12-16 clusters onto the parchment paper lined baking sheet. Transfer them to the freezer to freeze for 15-20 minutes.
- In the late 5 minutes, melt the chocolate chips on the stovetop in a small saucepan over medium low heat, stirring frequently to prevent burning.
- When the chocolate is melted and the blueberry yogurt clusters are frozen, drizzle the chocolate on the blueberries.
- Sprinkle them with granola and return the pan to the freezer to set for 10-15 minutes. The clusters are ready when the chocolate is hardened and set.
- Store leftovers in the freezer in an airtight container for several weeks.
