So many recipes, so little time!
Sometimes I don’t get around to making them until the trend is already old news on social media.
Like the baked feta pasta that I *just* got around to making a few weeks back (and wasn’t fully impressed with the vegan version!).
However, this week, I dug out some dates from the back of the refrigerator and decided it was time to try the Viral Date Bark, with a few variations.
I was surprised at how delicious this simple recipe is!
The few ingredients pair together beautifully to create a sweet and salty treat with an addictive crunch.
That paired with how insanely easy it was to make meant I have to share it with you.

What You Need to Make Viral Date Bark (Nut-Free!)
Here’s what you need to make this simple treat:
- pitted Medjool dates
- No Sugar Added SunButter
- sunflower seeds
- vegan dark chocolate chips
That’s it!
How to Make Viral Date Bark (Nut-Free!)
Because this recipe has minimal ingredients, the trick is to set the scene.
First, line a small baking sheet with parchment paper.
You can also use a plate but I found a baking sheet was easier for transferring to the refrigerator or freezer.
Split the dates open and press them down onto the sheet, making sure they overlap a little so they stick together.
I recommended using about a dozen dates so you make 3 rows of 4 or 4 rows of 3 to make a rectangle.
No Sugar Added SunButter
Drizzle the SunButter on top and use a spoon so spread it across the dates in an even layer.
I love using No Sugar Added SunButter in this recipe because it’s super creamy and nutty flavored without any nuts!
A few spoonfuls adds protein and healthy fats to this sweet treat.
And it makes this bark allergen-friendly for anyone avoiding nuts.
It’s OK if some SunButter drips through any holes in the dates.
This recipe is super forgiving!
Add Sunflower Seeds
Next, sprinkle on the sunflower seeds so that they cover the entire rectangle.
You can use roasted and salted sunflower seeds for a little extra sweet and salty combo.
Roasted and unsalted sunflower seeds also work well for this recipe.
Melt the Chocolate
Next, melt the chocolate chips.
I like to do this in a small microwave safe bowl by heating at 30 second increments until they are fully melted.
Alternatively, you can melt them on the stovetop in a small saucepan, stirring frequently to prevent burning.
Use a spoon to spread the chocolate on top of the SunButter layer so it coats everything.
Let the chocolate run over the sides and in any cracks so you have a nice concise chocolate covered rectangle.
Chill to Set
Transfer the baking sheet to the refrigerator or freezer for 10-15 minutes, or until the chocolate has set.
When the chocolate is set, the date bark is done!
To serve, chop the bark into pieces and enjoy.
I like to use a knife to cut the bark into 12 squares, but you can also just wing it and break off pieces!

I love to have a square as a mid morning or afternoon snack when I feel like the rest of the workday is endless.
It stores well in the refrigerator or freezer, so you can make a batch and enjoy morsels throughout the days ahead.
If you store the bark in the freezer, I recommend leaving it at room temperature for 10-15 minutes before serving so it has time to thaw.
For different nut-free variations, try adding different seeds instead of the sunflower seeds for crunch, like pumpkin seeds, hemp hearts, or sesame seeds.
