Description

Vegan Strawberry Brownies with fresh strawberries, and dark chocolate chips. A fun dessert to combine strawberries and chocolate!


Ingredients

  • 2 flax eggs (2 TBSP ground flaxseed + 6 TBSP filtered water)
  • generous 1/2 cup unrefined coconut sugar
  • ¼ cup unsweetened almond milk
  • ½ cup neutral nut or seed butter
  • 1/2 cup almond flour
  • 1/2 cup raw cacao powder
  • 1/3 cup Endangered Species 60% Dark Chocolate Baking Chips + more for sprinkling
  • ¼ cup chopped strawberries
  • ½ cup sliced strawberries

Instructions

  1. Preheat the oven to 350°F and line an 8 or 9-inch square baking dish with parchment paper or lightly grease with coconut oil.
  2. In a large mixing bowl, combine the ground flaxseed and filtered water and whisk to combine. Set aside for 5-10 minutes to gel.
  3. Add in the coconut sugar, almond milk, and nut butter and whisk everything until it’s smooth.
  4. Sift in the almond flour and cacao powder and mix until all ingredients are well combined. Fold in the dark chocolate chips and chopped strawberries. Pour the batter into the baking dish and smooth the top with a spatula. Add the remaining sliced strawberries in even rows on top of the brownie surface and gently press in with your fingers. Sprinkle with additional chocolate chips. 
  5. Bake the brownies for 25-30 minutes, then remove from the oven to cool. The brownies will appear underdone when removed from the oven, but will firm up while cooling. DO NOT OVER COOK. Cool for at least 30 minutes before serving. 
  6. Slice the brownies into squares with a knife and serve! 
  7. Store leftover brownies in an airtight container in the refrigerator for up to one week and freeze for long term storage.
