Description

Apple cranberry pecan granola with oats and pecans sweetened with maple syrup and applesauce. Toss in baked apple chips for extra crunch!

Ingredients

  • 3 cups gluten-free rolled oats
  • 1 1/4 cups raw pecans
  • 1/2 tsp cinnamon
  • 1/2 cup maple syrup
  • 1/3 cup unsweetened applesauce
  • 1/4 cup + 2 TBSP almond butter (or sub any nut or seed butter)
  • 1/3 cup dried cranberries
  • 1/2 cup Bare Snacks Apple Chips

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Mix the oats, pecans, dried cranberries, and cinnamon together in a large bowl.
  3. In a small saucepan over medium-low heat, warm the pecan butter, maple syrup, and applesauce and whisk. Pour over the dry ingredients and mix well with a wooden spoon. The mixture should be well coated but crumbly.
  4. Spread the mixture evenly onto the parchment covered baking sheet and press into an even layer with a spatula or your hands. Bake for 20-25 minutes, rotating the pan once halfway but not stirring anything.
  5. Once the granola is golden brown on top and the edges, remove from the oven and allow to cool for at least 15 minutes. Don’t touch the granola during this time! This will yield chunkier granola.
  6. After 15 minutes minutes, break the granola into desired sized chunks. Add baked apple chips and toss to combine.
  7. Transfer granola to an airtight container and keep for several weeks.
