Description

Chocolate Chunk Muesli Snack Cookies made in 1-bowl with muesli, almond butter and dark chocolate. Oil-free, gluten-free, and naturally sweet!


Ingredients

  • 1 flax egg (1 TBSP flaxseed + 3 TBSP filtered water)
  • 1/4 cup maple syrup
  • 1/2 cup nut or seed butter
  • 1 3/4 cup gluten-free muesli
  • 1/2 cup almond meal
  • 1/4 tsp cinnamon
  • 1/4 cup dried cherries or dried fruit (optional)
  • 1 bar Hu Kitchen Simple Dark Chocolate, roughly chopped (~1/3 cup chopped, plus more for topping)

Instructions

  1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. In a large bowl, mix together flax egg, maple syrup, and nut butter and mix until it’s smooth.
  3. Mix in the muesli, almond meal, and cinnamon and stir well to combine.
  4. Fold in the optional dried cherries and chocolate bar chunks.
  5. Roll the dough into ~2 TBSP balls, then flatten them with your hands into 16 cookie discs.
  6. Add the additional chocolate chunks on top, if desired.
  7. Bake the cookies for 12-15 minutes until they’re lightly browned underneath.
  8. Cool the cookies slightly before eating (they firm up a lot!) and store them in an air tight container in the refrigerator for up to one week.
