Description
Chocolate Chunk Muesli Snack Cookies made in 1-bowl with muesli, almond butter and dark chocolate. Oil-free, gluten-free, and naturally sweet!
Ingredients
- 1 flax egg (1 TBSP flaxseed + 3 TBSP filtered water)
- 1/4 cup maple syrup
- 1/2 cup nut or seed butter
- 1 3/4 cup gluten-free muesli
- 1/2 cup almond meal
- 1/4 tsp cinnamon
- 1/4 cup dried cherries or dried fruit (optional)
- 1 bar Hu Kitchen Simple Dark Chocolate, roughly chopped (~1/3 cup chopped, plus more for topping)
Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- In a large bowl, mix together flax egg, maple syrup, and nut butter and mix until it’s smooth.
- Mix in the muesli, almond meal, and cinnamon and stir well to combine.
- Fold in the optional dried cherries and chocolate bar chunks.
- Roll the dough into ~2 TBSP balls, then flatten them with your hands into 16 cookie discs.
- Add the additional chocolate chunks on top, if desired.
- Bake the cookies for 12-15 minutes until they’re lightly browned underneath.
- Cool the cookies slightly before eating (they firm up a lot!) and store them in an air tight container in the refrigerator for up to one week.
