Description

Chocolate Peanut Butter Rice Cake made with rice cakes, creamy peanut butter, and melted cacao wafers. A healthy peanut butter cup snack!


Ingredients

Chocolate Peanut Butter Rice Cake

  • 1 Rice Cake
  • 12 TBSP creamy peanut butter (or nut or seed butter of your choice)
  • 12 TBSP Navitas Organics Semisweet Cacao Wafers
  • ½ tsp coconut oil (optional)

Optional for Serving

  • cacao nibs
  • flaky sea salt

Instructions

  1. Add a rice cake to a parchment lined plate. 
  2. Coat the rice cake evenly with peanut butter or nut butter of your choice.
  3. Add the cacao wafers and coconut oil into a small bowl and microwave in two, 30-second increments. Stir the mixture in between to prevent the chocolate from burning. Alternatively, you can also melt your chocolate in a small saucepan on the stovetop over medium low heat. 
  4. Drizzle the melted chocolate on top of the peanut butter covered rice cake.
  5. Top with the rice cake with optional cacao nibs and sea salt and place in the refrigerator for 10-15 minutes, or until the chocolate is completely melted.
  6. Once the chocolate is cooled and hardened, enjoy it immediately!
