If you’ve been around here a while, you also know that I’ve been dressing up rice cakes for years.
While some people see dry, boring, bland cakes, I see a neutral and nutritious vehicle for *all* of my favorite toppings.
I mean, the possibilities are endless, friends.
Which is probably why I was immediately taken with the viral TikTok Chocolate Peanut Butter Cup Rice Cake.
(Well, that and the fact that my favorite dessert pairing in the history of dessert pairings is chocolate + peanut butter.)
Rice Cakes are also an amazing vegan and gluten-free substitution for toast, crackers, or anything wheat based.
It took me a while to finally try the recipe trending on social media, but now that I finally have, I *need* to share it with you.
This is my version of the Chocolate Peanut Butter Rice Cake.
They’re easy to make for a solo snack or dessert with your favorite rice cakes, creamy peanut butter, and melted cacao wafers.
Basically, it’s a healthier one serving peanut butter cup, and I think we could all use one of those as Halloween creeps up!
Grab some rice cakes, your favorite jar of nut butter, and Semisweet Cacao Wafers and let’s make this sweet treat.
What You Need to Make Chocolate Peanut Butter Rice Cake
You probably already have everything you need to make this Chocolate Peanut Butter Rice Cake in your pantry.
Here’s what you need:
- rice cake
- creamy peanut butter
- Navitas Organics Semisweet Cacao Wafers
- coconut oil
- Pinch of sea salt
That’s it!
How to Make Chocolate Peanut Butter Rice Cake
Add a rice cake to a parchment lined plate.
You can use any shape of rice cake for this recipe, but I like the circles!
Coat the rice cake evenly with peanut butter or any nut butter of your choice.
I think almond butter or cashew butter would be a delicious variation.
Melt the Cacao Wafers
Add the cacao wafers and coconut oil into a small bowl and microwave in two, 30-second increments.
Stir the mixture in between to prevent the chocolate from burning.
If you still see solid wafer pieces after stirring, microwave for an additional 30 seconds.
Alternatively, you can also melt your chocolate in a small saucepan on the stovetop over medium low heat.
Drizzle the melted chocolate on top of the peanut butter covered rice cake.
Spread the chocolate with a spatula or the back of a spoon to coat the peanut butter.
Toppings for Chocolate Peanut Butter Rice Cake
At this point, you can add any toppings you like!
Try topping the chocolate with cacao nibs or flaky sea salt for a little extra crunch and aesthetics.
Place the rice cake in the refrigerator for 10-15 minutes, or until the chocolate is completely melted.
Once the chocolate is cooled and hardened, enjoy it immediately!

I used Navitas Organics Semisweet Cacao Wafers to make this recipe super decadent and delicious.
These cacao wafers are made with 60% dark chocolate and have a unique shape and velvety texture.

I like to add a tiny bit of coconut oil to the wafers before melting to make them super creamy and drizzly.

Ingredients
Chocolate Peanut Butter Rice Cake
- 1 Rice Cake
- 1–2 TBSP creamy peanut butter (or nut or seed butter of your choice)
- 1–2 TBSP Navitas Organics Semisweet Cacao Wafers
- ½ tsp coconut oil (optional)
Optional for Serving
- cacao nibs
- flaky sea salt
Instructions
