Description

No-bake cookie bars made with a crushed cookie crust, dark chocolate center, and sweet almond butter fudge topping. Perfect for a fun dessert to share!


Ingredients

COOKIE LAYER

  • 12 oz. your favorite cookies
  • 23 TBSP coconut oil, melted

CHOCOLATE LAYER

NUT BUTTER LAYER

  • ¾ cup almond butter
  • 2 TBSP maple syrup
  • 2 TBSP coconut oil, melted 

TOPPINGS


Instructions

  1. Line a loaf pan with parchment paper and set aside.
  2. Add the cookies to a high speed blender or food processor with the coconut oil. Pulse until it resembles wet sand. Press into the bottom of a loaf pan and place in the freezer for 10 minutes. 
  3. Add the chocolate chips to a microwave safe bowl and microwave in ~30 second increments, stirring each time, until no chocolate chunks remain. Pour the melted chocolate on top of the cookie layer and freeze for another 5-10 minutes. 
  4. Combine the almond butter, maple syrup, and coconut oil in a bowl and whisk until smooth and creamy. Spread on top of the frozen chocolate layer. Transfer the loaf pan back to the freezer and freeze until completely set. 
  5. Lift the parchment paper from the loaf pan and place on a cutting board. Cut into 1” bars. Option to top with chocolate drizzle, shaved chocolate, and/or cookie crumble.
