Description
Grain-Free Apricot Almond Energy Bars made with 5 ingredients and naturally sweetened with dried apricots. Perfect for a meal prep snack!
Ingredients
- 1 1/2 cup Fruit Bliss Organic Turkish Apricots (2 packages)
- 1/2 cup raw cashews
- 1/2 cup pepitas
- 1 cup raw almonds, divided
- 1/2 cup shredded coconut (optional)
Instructions
- Prepare an 8 X 8 baking dish with parchment paper.
- Add the apricots, cashews, pepitas, half of the almonds, and optional shredded coconut to a high-speed blender and pulse everything until it’s well-combined, scraping down the sides as needed to recombine.
- Once you have a thick sticky paste, add in the remaining 1/2 cup of almonds and pulse until just slightly broken.
- Press the mixture into the parchment lined baking dish and refrigerate it for at least 1 hour before cutting into bars.
- Serve the bars immediately and store any leftover bars in an airtight container in the refrigerator for 1-2 weeks.
