Description
Raw Almond Butter Superfood Bars packed with superfoods, antioxidants, and protein for a nutritious snack or healthy dessert.
Ingredients
- 1 TBSP unrefined coconut oil
- 1/2 cup natural almond butter
- 2 TBSP pure maple syrup
- 1/4 cup (~1 scoop) protein powder
- 1/2 cup unsweetened coconut flakes
- 1/2 cup chopped walnuts
- 1/4 cup goji berries
- 1/4 cup cacao nibs
- 2 squares Almond Butter & Puffed Quinoa Hu Chocolate bar, chopped
- 1/2 bar Simple Dark Hu Chocolate bar, melted
Instructions
- Prepare a 9×6 baking dish with parchment paper or lightly grease with coconut oil.
- Melt the coconut oil in a small saucepan over low heat until liquid.
- Add the melted coconut oil to a mixing bowl along with the almond butter, maple syrup, and protein powder and stir until it’s well-combined.
- Fold in the coconut flakes, goji berries, cacao nibs, walnuts, and chopped chocolate bar and mix until everything is well coated. The batter should be stiff and sticky.
- Press the batter into the parchment paper lined baking dish in an even layer using your hands or the back of a spatula.
- Cover the dish and refrigerate it for at least one hour or until the spread has hardened and can be easily removed from the pan.
- Once it’s firm, remove the pan from the refrigerator and slice the contents into 6-9 bars. They’ll be a bit crumbly; that’s OK! These bars are all about texture.
- Heat the chocolate bar over medium low in a small saucepan if you want to garnish with optional chocolate drizzle. Once it’s warm and melted, drizzle the chocolate over the raw bars. Serve immediately or wait about ~1 hour for the chocolate to harden.
- Store leftover raw superfoods bars in the refrigerator for up to one week and freeze them for longterm storage.
