Sesame Tahini Soba Noodles

Description

Soba noodle bowl with sesame, tahini, broccolini, and edamame. Ready in under 30 minutes for a cozy better-than-takeout plant-based meal.


Ingredients

  • 1 (8-oz.) package Eden Foods Organic Buckwheat Soba Noodles
  • 1 large bunch or two small bunches of broccolini, chopped into thin strips
  • 1/2 TBSP avocado oil
  • 3 TBSP Tamari Lite
  • 1 TBSP tahini
  • ½ lime, squeezed
  • 1/2 TBSP pure maple syrup
  • 1 tsp of garlic chili paste
  • ¼ tsp garlic powder 
  • ¼ tsp ground ginger
  • 1 TBSP sesame oil 
  • 1 cup edamame, steamed
  • 1/4 cup green onion, sliced (green parts only) 

For serving

  • green onion, sliced
  • sesame seeds

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper. Add the chopped broccolini to the sheet pan and drizzle with the avocado oil. Massage the avocado oil into the florets until they’re well-coated. Transfer the sheet pan to the oven and bake the broccolini for about 10-12 minutes, until it’s tender and lightly browned. 
  2. Cook the soba noodles according to package instructions.
  3. In a small bowl, whisk together the garlic, ginger, Tamari Lite, tahini, lime, maple syrup, and chili paste.
  4. Heat a large pan with the sesame oil over medium high heat. Once it’s warm, add in the baked broccolini, cooked noodles, sauce, edamame, and green onions. Cook everything for about 2-3 minute, until the noodles, broccolini, and sauce are well incorporated and warm.
  5. Serve the noodles immediately topped with sesame seeds and green onion.
