Description
Soba noodle bowl with sesame, tahini, broccolini, and edamame. Ready in under 30 minutes for a cozy better-than-takeout plant-based meal.
Ingredients
- 1 (8-oz.) package Eden Foods Organic Buckwheat Soba Noodles
- 1 large bunch or two small bunches of broccolini, chopped into thin strips
- 1/2 TBSP avocado oil
- 3 TBSP Tamari Lite
- 1 TBSP tahini
- ½ lime, squeezed
- 1/2 TBSP pure maple syrup
- 1 tsp of garlic chili paste
- ¼ tsp garlic powder
- ¼ tsp ground ginger
- 1 TBSP sesame oil
- 1 cup edamame, steamed
- 1/4 cup green onion, sliced (green parts only)
For serving

- sesame seeds
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper. Add the chopped broccolini to the sheet pan and drizzle with the avocado oil. Massage the avocado oil into the florets until they’re well-coated. Transfer the sheet pan to the oven and bake the broccolini for about 10-12 minutes, until it’s tender and lightly browned.
- Cook the soba noodles according to package instructions.
- In a small bowl, whisk together the garlic, ginger, Tamari Lite, tahini, lime, maple syrup, and chili paste.
- Heat a large pan with the sesame oil over medium high heat. Once it’s warm, add in the baked broccolini, cooked noodles, sauce, edamame, and green onions. Cook everything for about 2-3 minute, until the noodles, broccolini, and sauce are well incorporated and warm.
- Serve the noodles immediately topped with sesame seeds and green onion.
