Description

SunButter Date Caramel Apples made with apples topped with homemade caramel and rolled in sunflower seeds and dark chocolate chips.


Ingredients

SunButter Date Caramel

For serving

  • Apples, sliced 
  • Sunflower seeds
  • Dark chocolate chips
  • Shredded coconut

Instructions

  1. Combine the dates, almond milk, and SunButter in a high speed blender or food processor and blend everything until it’s completely smooth and creamy.
  2. Test the consistency and adjust as needed. For a thinner consistency, add more almond milk in 1 TBSP increments. For a thicker consistency, throw in a few extra dates. Blend everything again to combine and repeat until you achieve your desired consistency. The vegan date caramel should be thick and scoopable.
  3. Poke a lollipop stick or skewer that has been trimmed into each apple slice.
  4. Use a spoon or spatula to smear the caramel onto each apple. Roll them any additional toppings, like sunflower seeds, dark chocolate chips, and shredded coconut.
  5. Store leftover vegan caramel apples in the refrigerator for up to 5 days. Store leftover date caramel in the refrigerator for up to two weeks and serve re-warmed or chilled.
