SunButter Date Caramel Apples made with apples topped with homemade caramel and rolled in sunflower seeds and dark chocolate chips.
Ingredients
SunButter Date Caramel
- 1 cup gooey Medjool dates, pitted
- 1/3 cup unsweetened almond milk
- 1/4 cup No Sugar Added SunButter
For serving
- Apples, sliced
- Sunflower seeds
- Dark chocolate chips
- Shredded coconut
Instructions
- Combine the dates, almond milk, and SunButter in a high speed blender or food processor and blend everything until it’s completely smooth and creamy.
- Test the consistency and adjust as needed. For a thinner consistency, add more almond milk in 1 TBSP increments. For a thicker consistency, throw in a few extra dates. Blend everything again to combine and repeat until you achieve your desired consistency. The vegan date caramel should be thick and scoopable.
- Poke a lollipop stick or skewer that has been trimmed into each apple slice.
- Use a spoon or spatula to smear the caramel onto each apple. Roll them any additional toppings, like sunflower seeds, dark chocolate chips, and shredded coconut.
- Store leftover vegan caramel apples in the refrigerator for up to 5 days. Store leftover date caramel in the refrigerator for up to two weeks and serve re-warmed or chilled.
