Description

SunButter Stuffed French Toast made with creamy SunButter and your favorite jam. Top with fresh berries and maple syrup!


Ingredients

For the French Toast:

  • 1 TBSP ground flaxseed
  • 2 TBSP cornstarch
  • 2/3 cup unsweetened almond milk
  • 1 TBSP maple syrup
  • 1/4 tsp cinnamon
  • 68 slices sourdough bread, lightly toasted
  • 1 TBSP vegan butter or coconut oil

Instructions

  1. Toast the bread
    Lightly toast the sourdough bread slices before assembling. This helps the bread hold up to the batter and filling while creating crisp edges and a soft center.
  2. Prepare the batter
    In a shallow bowl, whisk together the flaxseed and cornstarch. Slowly whisk in the almond milk to avoid clumps, then stir in the maple syrup and cinnamon. Let the mixture sit for a few minutes to thicken.
  3. Assemble the French toast
    Spread SunButter onto half of the toasted bread slices and chia jam on the remaining slices. Press the two sides together to create sandwiches.
  4. Dip the sandwiches
    Dip each sandwich into the batter and soak for about 10–15 seconds per side. The bread should absorb some batter without becoming soggy.
  5. Cook
    Heat a skillet over medium to medium-low heat and add vegan butter. Cook each stuffed French toast sandwich for about 4–5 minutes per side, or until golden brown and crisp on the outside while warmed through in the center.
  6. Serve
    Slice and serve warm with fresh berries, maple syrup, and extra SunButter drizzle.
