Description

Vegan blackberry sundae made with plant-based vanilla ice cream and a homemade refined-sugar-free blackberry compote. Serve with more berries and mint!


Ingredients

Ice Cream

  • ¾1 cup non-dairy vanilla ice cream

Blackberry Sundae Sauce

  • 1 cup fresh or frozen blackberries 
  • 1/4 cup filtered water
  • Squeeze of lemon juice
  • 1/2 TBSP pure maple syrup

For serving 

  • fresh mint 
  • Fresh blackberries 

Instructions

  1. Add the blackberries to a large saucepan over medium heat with the filtered water, lemon juice, and maple syrup. Once the berries start to steam and release their juices, slightly smash them with a fork until you have a rough blackberry mash. Allow them to simmer for 8-10 minutes, until you have a thick and sticky sauce. 
  2. Allow the blackberry sundae sauce to cool slightly (about 5-10 minutes) before serving.
  3. To serve, add the ice cream to a bowl or sundae glass. Spoon the blackberry sundae sauce over the ice cream and serve it immediately with fresh mint and fresh blackberries. 
  4. The blackberry sundae sauce will make 4-6 servings. Allow the sundae sauce to cool completely, then store it in an airtight container in the refrigerator for up to one week and reheat in the microwave for ~15-30 second before serving.
