Description

Easy vegan baked beans made with navy beans and simple seasonings naturally sweetened with pure maple syrup. The perfect easy plant-based summer side!


Ingredients

  • 12 tsp avocado oil
  • 1 large sweet onion, diced
  • 3 15-oz. cans Eden Foods Organic Navy Beans (~4.5 cups cooked navy beans), drained and rinsed
  • 1/4 –  1/3 cup pure maple syrup
  • 2 TBSP yellow mustard
  • 2 TBSP apple cider vinegar
  • 1/2 cup tomato paste
  • 1/2 tsp Himalayan sea salt
  • 1/41/2 cup filtered water
  • fresh herbs (optional), for serving

Instructions

  1. Heat a large pot over medium heat. Once hot, add the avocado oil, and diced onion. Sauté for 3-5 minutes, stirring frequently, or until onion is soft and translucent.
  2. Next, add the drained and rinsed beans along with the mustard, tomato paste, maple syrup, filtered water, and sea salt. Stir to coat and cook on low for 10-15 more minutes to let the flavors meld.
  3. Taste and adjust seasonings as needed, adding a little extra mustard, tomato paste, coconut sugar, or salt to reach your desired flavoring.
  4. Enjoy immediately with fresh herbs! Store leftover baked beans in the fridge for up to one week.
