Description
Easy vegan baked beans made with navy beans and simple seasonings naturally sweetened with pure maple syrup. The perfect easy plant-based summer side!
Ingredients
- 1–2 tsp avocado oil
- 1 large sweet onion, diced
- 3 15-oz. cans Eden Foods Organic Navy Beans (~4.5 cups cooked navy beans), drained and rinsed
- 1/4 – 1/3 cup pure maple syrup
- 2 TBSP yellow mustard
- 2 TBSP apple cider vinegar
- 1/2 cup tomato paste
- 1/2 tsp Himalayan sea salt
- 1/4– 1/2 cup filtered water
- fresh herbs (optional), for serving
Instructions
- Heat a large pot over medium heat. Once hot, add the avocado oil, and diced onion. Sauté for 3-5 minutes, stirring frequently, or until onion is soft and translucent.
- Next, add the drained and rinsed beans along with the mustard, tomato paste, maple syrup, filtered water, and sea salt. Stir to coat and cook on low for 10-15 more minutes to let the flavors meld.
- Taste and adjust seasonings as needed, adding a little extra mustard, tomato paste, coconut sugar, or salt to reach your desired flavoring.
- Enjoy immediately with fresh herbs! Store leftover baked beans in the fridge for up to one week.
