My take on the Viral Magic Cookies made with just four pantry ingredients in 15 minutes. The perfect grain-free cookie that’s sweet, chewy, and crunchy.
Ingredients
- 1 1/2 cups crushed cashews
- ½ cup cashew flour (cashews pulsed into a flour in the blender)
- 2 cups unsweetened coconut flakes (not shredded coconut!)
- 1 cup Endangered Species Oat Milk 55% Dark Chocolate Chips
- ½ cup sweetened condensed coconut milk
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Add all of the ingredients to a mixing bowl and combine until the mixture is a sticky crumble.
- Transfer the mixture to the prepared baking sheet and form them into rough circles with your hands or a spatula.
- Transfer the baking sheet to the oven and bake them for ~14-15 minutes, or until the top is golden brown but not burnt. Watch the cookies carefully in the last few minutes of baking to ensure the coconut doesn’t burn.
- Remove the cookies from the oven and if the cookies have spread, use a spatula to reform them slightly. Allow the cookies to cool for 20 minutes before eating them. This will preserve their shape!
- Once the cookies are cooled and hardened, enjoy immediately! Store any leftover cookies in an airtight container for up to one week.
