Description
Easy apple butter stovetop oats sweetened with apple butter and dressed up for fall with a crunchy seed and nut blend. Perfect for an easy breakfast.
Ingredients
Apple Butter Stovetop Oats
- 1/2 cup gluten-free old-fashioned rolled oats
- 1 cup unsweetened almond milk
- 2 tsp chia seeds
- 1/2 sweet apple, diced into small squares (optional)
- 1–2 TBSP Eden Foods Organic Apple Butter
- 1/4 tsp ground cinnamon
Toppings
- 1 TBSP Eden Foods Pumpkin Seeds
- 1 TBSP Eden Foods Roasted Almonds
- 1 TBSP Eden Foods Dried Wild Blueberries
- 1 TBSP Eden Foods Dried Cranberries
- 1 TBSP nut butter (optional but recommended!)
Instructions
- Add the oats, almond milk, chia seeds, cinnamon, and diced apple to a saucepan over medium-high heat. Bring the mixture to a low-boil, then reduce the heat to medium/medium-low and simmer for 10 minutes, until all of the oats have absorbed the almond milk and the apples are soft and tender. Add more almond milk as needed to reach desired consistency.
- Stir in 1-2 Tablespoons of apple butter and taste to reach your desired sweetness. I like to add 1 tablespoon directly to the oats and another tablespoon as a topping.
- Transfer the contents to a bowl and top the oats with pumpkin seeds, roasted almonds, dried blueberries, dried cranberries, and a spoonful of nut butter.
