Description

Cozy up with this Vegan Applesauce Gingerbread Loaf that’s moist, warmly spiced, and naturally sweetened with a maple cream cheese frosting.


Ingredients

Applesauce Gingerbread Loaf

  • 1 1/4 cup oat flour
  • 1 cup superfine almond flour
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 ½ tsp cinnamon
  • ¼ tsp fine sea salt
  • ½ cup Eden Foods Organic Applesauce
  • ½ cup blackstrap molasses
  • ½ cup coconut sugar
  • 1/4 cup unsweetened non-dairy milk
  • ¼ cup neutral oil

Vegan Cream Cheese Frosting

  • 1 cup vegan cream cheese, softened
  • ¼ cup pure maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper or lightly grease with coconut oil.
  2. In a large bowl, whisk together applesauce, molasses, coconut sugar, non-dairy milk, and neutral oil until smooth.
  3. Add in the flours, baking powder, ginger, cinnamon, and stir until just combined. Avoid over-mixing to keep the loaf tender and fluffy!
  4. Transfer batter to the prepared loaf pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  5. Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack to cool fully. (Frosting will melt if the loaf is warm!)
  6. Beat vegan cream cheese until smooth. Add in the maple syrup and mix until it’s creamy and spreadable.
  7. Spread frosting evenly over the cooled loaf. Slice and serve and enjoy!
  8. Store leftovers at room temperature for up to 3 days and in the refrigerator for up to one week. Freeze slices for long term storage and microwave before enjoying.
