Cozy up with this Vegan Applesauce Gingerbread Loaf that’s moist, warmly spiced, and naturally sweetened with a maple cream cheese frosting.

Dear friends, I have finally given up ice cream for the season.
I know, I know.
Ice cream is one of my top desserts and typically I eat it all year round.
But this time of year when I take staying warm as seriously as I do content creation, I have to ask myself, isn’t the ice cream a *little* contradictory?
If you can eat all of the cold things and stay warm this season, I envy you and you are magic.
But if you are like me and need to actively work to stay warm, let’s make a pact to not cool ourselves out unnecessarily.
So I’ve given up ice cream in an effort to eat seasonal warm baked goods, and, hopefully support my wallet (those vegan ice creams aren’t cheap!).
If you’ve been craving something warm, comforting, and lightly spiced, this Vegan Applesauce Gingerbread Loaf is exactly what you need this season.
Moist, tender, and naturally sweet, it’s the kind of loaf that fills your kitchen with the smell of cinnamon and ginger the moment it comes out of the oven.
Whether you’re looking for a sweet breakfast, an afternoon snack with tea, or a cozy dessert to share with friends or family, this loaf has you covered.
The simple maple cream cheese frosting takes it to the next level, adding just enough sweetness to make each slice feel indulgent (without being overwhelming!).
It’s easy to make, forgiving, and entirely plant-based, so you can feel good about enjoying a slice (or two!) any time you need a little comfort and warmth.

How to Make Applesauce Gingerbread Loaf
Making this Gingerbread Loaf is simple and requires just one bowl.
Start by whisking together your wet ingredients (applesauce, molasses, coconut sugar, non-dairy milk, and neutral oil) until smooth.
Add in the dry ingredients (flours, baking powder, ginger, cinnamon, and salt) and stir gently until just combined, being careful not to over-mix!
Bake the batter in a greased, parchment-lined 9×5-inch loaf pan at 350°F for about 50–55 minutes, or until a toothpick comes out clean.
While the loaf is baking, you can mix up the cream cheese frosting by hand.
Let the loaf cool completely on a wire rack before frosting it with the tangy and sweet maple vegan cream cheese frosting.
Slice and enjoy a perfectly moist, spiced, and cozy loaf any time of day.

Eden Foods Organic Applesauce
One of the secrets to this gingerbread loaf’s moist, tender crumb is the Eden Foods Organic Applesauce.
This isn’t just any applesauce!
It’s made from a careful blend of organic Great Lakes apples, gently washed, peeled, and cooked without any added sugar or preservatives.
Eden Foods has been doing clean, honest food for decades, and their applesauce reflects that heritage: just pure fruit, slow‑cooked for natural sweetness and flavor.
With only apples in the ingredient list, it keeps the recipe wholesome while also bringing its own fruity depth and natural sweetness.
Using this applesauce lets the loaf stay moist without relying on refined sugars and extra oils.
It’s a cozy swap that tastes just like fall in a jar.

Swaps and Substitutions
This gingerbread loaf is flexible and easy to adapt depending on what you have on hand.
You can swap the oat and almond flour for 1:1 gluten-free flour or regular all-purpose flour if you’re not avoiding gluten.
The non-dairy milk can be replaced with any plant-based milk; almond, oat, soy, or even cashew milk works beautifully.
If you’d like a slightly lighter sweetness, you can reduce the coconut sugar or replace it with maple syrup, date syrup, or another natural sweetener.
The neutral oil can be substituted with melted coconut oil or melted vegan butter.
For the frosting, the maple cream cheese frosting can be left off for a lighter loaf, or you can use a simple powdered sugar glaze if you prefer.
Even though the recipe doesn’t have mix-ins, feel free to add chopped nuts, dried fruit, or crystallized ginger for extra texture and festive flair.
How to Serve Applesauce Gingerbread Loaf
This loaf is the kind of bake that gets better the longer it sits on the counter or refrigerator.
This makes it perfect for slow mornings, afternoon pick-me-ups, or sharing with friends and family during the holidays.
The spices magically deepen overnight, and each slice tastes a little richer and cozier the next day.
You can dress it up for dessert or keep it simple for breakfast.
It’s incredibly versatile and fits into any moment where you want something warm, comforting, and lightly sweet.
