Description

Berry Baked Oat Squares with rolled oats, almond flour, No Sugar Added SunButter, and berries. Bake and slice into squares for meal prep!


Ingredients

  • 2 TBSP ground flaxseed + 6 TBSP filtered water
  • 1 large banana, smashed
  • 1⁄4 cup pure maple syrup
  • 1⁄2 cup unsweetened almond milk
  • 2 TBSP No Sugar Added SunButter
  • 2 cups organic old fashioned oats
  • 1⁄2 cup superfine almond flour
  • ½ tsp baking powder
  • 1 cup mixed berries (frozen or fresh)

Instructions

  1. 1 cup mixed fresh or frozen berries (I like raspberries, blueberries, and blackberries) 
  2. Preheat your oven to 350°F and line a square baking dish with parchment paper or lightly grease with coconut oil. 
  3. In a large mixing bowl, add the ground flaxseed and filtered water and whisk with a fork to combine. Allow to sit for ~5 minutes to gel. Mash the banana into the same bowl. Next, add the rest of the ingredients and mix until well combined. Fold in the mixed berries. 
  4. Transfer the batter to the prepared baking dish and bake for about 30-35 minutes or until the top and edges start to brown. 
  5. Remove the baked oat pan from the oven and allow it to cool completely before cutting into squares. Serve the squares chilled or re-warmed. Store the squares in an airtight container in the refrigerator for up to one week. Freeze squares for long term storage and reheat in the microwave before serving.
